I like it.

I liked it a lot but I still have some things to work out. Like reducing the red wine raspberry chipotle tomatillo sauce better. Maybe use a chopped avocado instead of spicy guacamole and while I like the shredded Manchego cheese Misha preferred a typical Mexican cheese blend instead. I would say HEATHEN but she will probably read this so … I love you babe and your cheese blend is the best! Nom nom nom.

Oh, she also added a spicy tomato salsa ... so you had spicy pork, spicy guacamole, AND spicy salsa. Can you tell who is starting to develop a taste for heat?

Anyway not sure if normal diced tomatoes would hold up or would just be overwhelmed by the sauce. So I am not sure to try them out or not in the next round of tacos.

I definitely need to continue experimentation with this recipe.
