A recipe from the Alinea Restaurant cookbook. Roasted garlic and peppers, olive oil pudding, white anchovies, serrano chilis, dried olives, croutons and cheese covered with melted Manchego cheese, arugula and spices.

An amazing new years eve buffet. For starters a cocktail snack with split dates filled with manchego cheese. Then a salad consisting of butterfried pears, green leafs, manchego cheese topped off with roasted almonds and balsamico. A beetroot gratin with västerbotten cheese topped off with roasted almonds. One of the tastiest potato gratins I've ever eaten with veggie cocktail-sausages on the side. Served with a delicious bottle of 11 year old Champagne.
Las primeras luces del otoño, a pesar de no estar en fechas, ya han llegado. Si bien esta zona no es una de las que más me gusten, hay que reconocer que las puestas de sol en la llanura manchega tienen encanto.
Cheese plate of brie, Manchego, Idiazabal, with sultana crispbread, quince jam and walnuts. Idiazabal (bottom), local cheese, slight crumble, mild, medium firm, spreads in mouth. Brie (middle) mild, soft, creamy with wine. Manchego (top) slight crumble, firm. Quince jam dry, tart, slightly sweet.
This sandwich speaks for itself. The fig slices are supplemented by their own fig preserves spread. Once your tongue accepts the salty proscuitto at the bottom, the fig comes in and makes a solid argument. You can let your tongue be the jury.
