Easy recipe and very low calorie!!!!

20g leeks
9g garlic
5g red chilli
92g mushrooms
5ml dark soy sauce
22g buckwheat noodles
11g spring onion
62g Chinese cabbage
4g fresh mint
Basically boil some water in saucepan (around 300 to 350 ml). Add sliced leeks, chopped chilli, sliced garlic, soy sauce and gently simmer whilst prepping other veg. Add sliced mushrooms, shredded cabbage and noodles. Cook for around 4 minutes. Taste and add salt / pepper. Serve in a bowl with chopped fresh spring onions and chopped fresh mint.
This meal was about 240 calories and consisted of 70g chickpea pasta, 44g broccoli, 31g boiled leeks, 1/2 a red chilli, 2 cloves of garlic and 2 thin slices of red pepper. I seasoned with 1/2 tsp of balsamic vinegar, sea salt & black pepper.
Chickpea fusilli is available from Waitrose ... brand name is UGO.

2 lbs tomatoes (seeded and chopped)
2 tbsp olive oil
1 small onion, chopped
1 garlic clove, minced
1 tsp salt
1 tsp sugar
1/2 tsp dried basil
1/2 tsp dried oregano
1/4 tsp pepper
Hot Cooked pasta ~1/2 lb
Shredded parmesan cheese (toss in after cooked)
Bake in 9 x 13 pan uncovered at 350* for 50-60 stirring twice. Toss with pasta; sprinkle with parmesan.
