I offer to cook dinner for my son and his wife. She is vegan and so I peruse the internet for something delicious to make. I find a recipe for Lentils Cacciatore that sounds perfect and start by rinsing the lentils. When I come back to them their color is truly beautiful.

I made this red lentil soup to use up some smoked turkey left over from Thanksgiving (and yes, I did smoke the turkey myself). Makes a nice hearty meal, lunch in this case. Recipe at cookingwithsteve.blog/

All our fall foliage is gone, so I decided to have a lazy weekend at home. My camera only came out of its bag to take photos of food. (and I cooked a lot this weekend!)
On Sunday morning, I made a big pot of lentil and sausage soup and a pan of sweet cornbread. It will be my lunch for most of the week.
I've heard it said that no self-respecting Southerner puts sugar in their cornbread. There must be some truth to that, because I actually grew up hating cornbread because I thought it always tasted gritty, dry, bland and crumbly. Then, about ten years ago I had cornbread at a restaurant in Maine. It totally changed my mind about cornbread. Now, I love it... but it has to be sweet, moist and almost cake-like.
Both of these dishes followed new recipes, and both were excellent!

Another winter warmer, which I usually make in big batches and put in the freezer. Chop up one onion and brown gently in a nice flavored oil such as peanut or sesame (cold pressed is best for flavor, always). Add 2 or 3 cloves of chopped garlic, 1/4 cup chopped lemongrass, and 1/4 cup chopped ginger, allowing to soften for a couple of minutes. Then add 1 lb red lentils, with water to barely cover. Cook the lentils until done (15 minutes if relatively fresh), adding small amounts of water if needed, and salt to taste. Don't add too much water, because you will add coconut milk to the liquid, 1 or more cups (the full fat version makes for a tastier curry), red pepper flakes, and curry powder to taste (or you can make your own flavorful fresh curry paste! www.jamieoliver.com/recipes/recipe/easy-homemade-curry-pa... ).
Serve with a dollop of yogurt, a dash of pepper sauce, and a piece of naan (I am fortunate to be able to buy toaster-sized naan). Yes, fresh naan is best but this works for me!

i didn't really follow the recipe, because i wanted lots of veggies in my soup, and wanted to use some of the mujadara i made yesterday.
how to make a bread bowl (which is surpisingly easy):
take a good firm bread roll
cut the top off with a serrated knife
slide the knife under the crust at an angle
cut all the way around
pull out the bread innards
brush with olive oil
place in the oven, under the grill for a couple of minutes
this hardens it up and gives it a lovely color
and you're done!
