These lemon bars turned into a headache for me and a sign that I'm slowly losing my mind.

 

I somehow managed to mix up my flour and icing sugar containers (that look nothing alike) and messed the first batch of lemon squares that I made.

 

So this afternoon I ended up making a second batch, this time with the right ingredients and am glad I didn't give up and go buy something.

 

They turned out to be quite delicious, but maybe that's just the extra effort.

I will end my 52 Week Photo project with a montage of Holiday desserts made by my best friend with whom our celebrates Christmas day. This is a small selecion of the various desserts she made which were outstanding.

...there is always baking. This is my mother's Frosted Lemon Squares recipe. (It is a sentimental experience seeing her handwriting on the faded recipe card.)

Every month I get together with a group of women (the "Tea Ladies") to have an afternoon tea. I always look forward to seeing them, catching up on our lives, sipping tea, and enjoying the delectable goodies everyone has brought.

 

This time I tried a new squares recipe with a coconut shortbread base and a lemon custard topping. Very yummy!

Lemon Squares

 

6 tbsp. butter

1/4 cup sugar

1/4 tsp. salt

1 cup all-purpose flour

3/4 cup sugar

2 tbsp. all-purpose flour

1/4 tsp. (at least!) finely shredded lemon peel

3 tbsp. lemon juice

1/4 tsp. baking powder

Powdered sugar

 

Beat butter until softened. Add 1/4 cup sugar and salt and beat until fluffy. Stir in 1 cup flour. Press dough onto the bottom of a greased 8x8x2-inch baking pan. Bake in a 350 degree F oven for 15 minutes.

 

Meanwhile, beat eggs. Add 3/4 cup sugar, 2 tbsp. flour, lemon peel, lemon juice, and baking powder. Beat about 3 minutes or till slightly thickened. Pour the lemon mixture over the baked layer.

 

Return to the oven for 25 to 30 minutes or till edges are light golden brown and the centre is set. Cool. Sift powdered sugar over cookies. Cut into squares. Makes 16.

Lemon square with fiber optic backlighting and a desk lamp in front. Camera is a compact Canon SD1200is handheld in Spot meter mode and macro focus. Various adjustments in Photoshop CS3 made to see if the back light could be seen in front. I ended up with a abstract kind of image.

 

The recipe is nothing special...flour, eggs, butter, granulated sugar, 10x confectioners sugar, a touch of salt and juice from one lemon.

This is the Pyrex 222-R dish I use to make Lemon Squares. This image was made by simply holding the dish up to a window and shooting close up in macro mode. The room is actually normally lit but appears dark from the camera scaling down the exposure due to the brighter window light. No post processing needed. This dish must be 30 years old. It's gets no special care but it sure holds up well.

The crust is similar to a shortbread. Butter, flour, powdered sugar.

The filling is eggs, a little flour, salt, sugar, lemon juice, and a little milk.

my mom has this little paper recipe book, with black binding down the side. it's where this lemon square recipe resides. i thought i too, had a copy, but not here.

 

it's amazingly simple, if your oven doesn't turn everything into black carcinogens, sigh.

 

this is batch two, came out better than the first...just not as solid?

I wanted a better than usual picture of my lemon squares. This one is posed on a decorative glass tile. A fiber optic source is just out of view in the rear. An ordinary desk lamp is filling the front. I set the camera for tungsten color balance. Lemon square number 3652PS. Image taken with handheld Canon SD1200is. I used spot meter mode until it looked right. Sadly, the lemon square fell to the floor minutes later.

 

The recipe is the same as most lemon squares...flour, eggs, butter, granulated sugar, 10x confectioners sugar, a 1/4 teaspoon salt and I like to use a real lemon for the juice.

Tomorrow(11/15) is my Annual 39th birthday. Last night I made two batches of cupcakes and two batches of my famous lemon squares (all from scratch of course). I brought them into work this morning to share with my co-workers. I've never done this before but I felt like giving to others instead of just getting presents. It was pretty cool and my goodies were a big hit, especially the lemon squares. If you want the recipe, just ask.

i promised them to my sunday night class.

 

recipe (adapted from betty crocker cookbook, some 70s version)

 

preheat oven to 350

line a 9X13 pan with parchment

 

crust:

 

1 cup butter, softened

1/2 c powdered sugar

2 c flour

dash of salt (omit if butter is salted)

fork that all together until it is well mixed into moist crumbs, then dump it into the pan and press it down into an even layer, squishing some up the sides about 1/2 inch.

 

bake in oven for about 20 minutes or until edges start to brown

 

meanwhile, in a bowl, mix:

 

2 cups granulated sugar

4 eggs (if eggs are not huge, i sometimes add an extra yolk)

the zest from 2 or 3 lemons (i use a microplane to zest)

about 1/2 cup lemon juice

pinch or so of salt

1-2 T flour

1 t baking powder

 

whisk that all together until there are no flour lumps and it is a little foamy

 

pour over hot crust and bake for about 30 minutes, until top is browned and it feels firmish to the touch. (it will stil give, but should not be mushy)

 

let cool completely.

 

sift powdered sugar over the top. (or, if you are me, dump powdered sugar on top and shake it around in the pan.)

 

remove from pan, cut. (this is when you will be super happy that you lined the pan with parchment.)

  

My dad gave us some lemons from his tree the night before Christmas, so I decided the best way to show our appreciation would be to make a lemon dessert. I had never made lemon squares before, but I've always loved them. I didn't have powdered (confectioner's) sugar, so I topped them with homemade whipped cream. I discovered baker's cream a couple of years ago, and now I use it exclusively when I want a whipped dessert topping. It is presweetened, vanilla flavored, and contains stabilizing agents that allow you to whip it stiff enough for a frosting without churning it into butter.

I had an email tip from a nice lady (thank you Myra!) about a holiday cookie photo contest at www.allrecipes.com. I found out with only a few days to go, but I'm baking what cookies I have time to bake from their list, and taking lots of pictures. They are accepting photos up until January 2nd, from what I understand and open to U.S. residents.
