These lemon square bars were highly recommended by my aunt, the esteemed baker in the family. They're a sort of solid lemony custard on top of a crumbly shortcake base.

Lemon squares are a traditional, last-minute, filler dessert we do with my mom a lot.
This recipe comes from Joy of Baking:
Ingredients for Crust:
1 C / 2 sticks / 225 g unsalted butter, room temperature
1/2 C / 50 g powdered sugar
2 C / 280 g all-purpose flour
salt
Ingredients for Filling:
2 C / 400 g granulated white sugar
4 large eggs
2/3 cup / 160 ml fresh lemon juice (approximately four large lemons)
2 T grated lemon zest
4 T / 50 g all-purpose flour
Powdered sugar for topping
Preheat oven to 165.
Cream the butter and sugar until light and fluffy. Add the flour and salt and beat until the dough just comes together. Press into the bottom of a greased pan and bake for about 20 minutes or until lightly browned. Set out to cool while you make the filling.
Beat the sugar and eggs until smooth. Add the lemon juice and zest and stir to combine. Fold in the flour. Pour the filling over the shortbread crust and bake for about 20 minutes, or until the filling is set.
Yield: 32 2-inch / 5-cm squares
I had an email tip from a nice lady (thank you Myra!) about a holiday cookie photo contest at www.allrecipes.com. I found out with only a few days left in the contest to go, but I'm baking what cookies I have time to bake from their list, and taking lots of pictures. They are accepting photos up until January 2nd, from what I understand and open to U.S. residents.
I think I just found my all-time favourite recipe for Lemon Squares... nice crisp crust, lots of buttery sweet/tart filling... and best of all... it cut clean out of the pan... even the FIRST piece! That in itself, is a remarkable feat...

Quilt back, using large pieces from many of the patterns on the front. I alternated cool-warm horizontally and vertically, and alternated the sides of off-centering.
