Marinate the chops in olive oil, garlic, rosemary and thyme for a few hours in the fridge.
Cut the potatoes into cubes, parboil them for five minutes, drain. In a large frying pan heat olive oil from the marinade and a generous knob of butter and sautee the cooled potatoes until crispy.
Braise the asparagus in a mix of good olive oil and lime juice, seasoned with salt and pepper.
Scrape the solids off the chops and sear them in a very hot pan. Turn down the heat and cook a bit more until done to your liking.
Remove the chops from the pan and keep warm to rest. In the meantime deglaze the meat pan with a generous glug of red wine and let reduce.
Serve the chops on the asparagus with the potatoes on the side and drizzle everything with the red wine jus.

Her talent has also found her performing with symphony orchestras in North America and Europe, with The London Philharmonic, Bergen Philharmonic, Oslo Chamber Orchestra, New York Chamber Orchestra, New York Pops, Vancouver Symphony, and the Baltimore Symphony in the most prestigious halls and TV shows including Carnegie Hall, Vienna's Musikverein, and Avery Fischer Hall.Rebecca has worked on several collaborations with Dave Soldier, including current project The Lost Victrola Sessions. Ms. Cherry is featured on several tracks on Soldier’s “Chamber Music” named one of the top classical recordings by The New York Times in 2007. Lambchop turned out to be a cute lamb indeed. His nose is a tad wide, but he says can smell the flowers better.
lamb ravioli and some perfectly cooked spinach. Considering it was plated on a styrofoam container and eaten at an old flaking picnic table, I think it looks pretty damn yummy. This is my new favourite Rhinebeck food. Better even than the lambburgers.

Lamb chops w/mushrooms. Wilted Chard and cress, and crostini as sides.
Lamb chops: EVOO, touch of cumin, and S and P grilled on lump and some oak chunks
Mushrooms: baked shallots in foil w/EVOO and thyme sprigs on grill. Chopped those up and threw them in 2 tbls duck fat w/rosemary. Then sauteed mushrooms in that and put onto lamb.
Chard: Let EVOO slowly simmer in pan with 4 chopped garlic cloves for 15 minutes, then turned up and tossed in Chard. Added chopped cress and a bit of Oregano at the end.
