As you may know, I follow the Cooks Tour blog by Alison Cook from the Houston Chronicle. In particular, I am a fan of her Burger Friday feature. Sometimes, she'll catch me by surprise. Such was the case with the Salchi-burger at Brisa Cocina Mexicana.
Holy shit.
This mammoth concoction combines:
A delicious grilled bun
A layer of refried beans
A half pound of delicious ground beef
A slice of ham
Chihuahua cheese
Salchi—a Mexican jalapeno sausage
Avocado
Onion
Tomato
Lettuce
Mayo
Scared? You should be. This thing is a complete mess, but a delicious mess. Everything goes SO WELL together. The burger is made with loving care and is perfectly cooked to a juicy doneness.
The burger gets an A.
The fries… breathtaking. I don't think they are double fried, but there is some crunch on the outside of perfectly cooked soft insides. Very, very delicious.
This whole meal gets an A.
Excuse me now, because I am fighting an intense post-lunch coma.

Some fun details about Hawaii Kabuki.
We were so fortunate - well, first of all, to be in such a production at all, given how few schools outside Japan, or even within Japan, allow for the opportunity to take part in a kabuki production - but also, on a more detailed level, to have the advantages of such wonderful resources.
*George Wago, our wig & makeup expert, has been doing this for over 40 years.
*It takes about three hours for an actor to get their makeup, wig, and costume fully done.
*The 1979 UH production of the Forty-Seven Samurai (aka 47 Ronin, aka Chushingura) toured the US to rave reviews.
*The Vengeful Sword was the 31st kabuki done at UH.
*UH has been doing English-language kabuki since 1924.
*UH has over 300 pairs of tabi socks, and 2000 kimono, of which about 250 are used for kabuki productions.
*Onoe Kikunobu -sensei has choreographed nearly every kabuki production at UH since 1951.
Many of our contacts, friends and family know that we really enjoy going and having a good ‘snoop’ in other people’s gardens! So, for quite a few days in our year, usually from early spring to late autumn (and occasionally winter too) we go and support worthy charities where possible.
On Saturday 18th April 2015 we went to Denham village and Higher Denham, which is not too far from Uxbridge and Gerrards Cross. On this day we chose to support the Thames Valley Air Ambulance Service. You can find out more about them here:
This particular charity depends totally on charitable donations. Through Open Days in 2014 they raised £54,000!
I was staggered to discover that they launch a helicopter, an average of three times a day. Each flight costs £2,500. So there annual running costs is an eye-watering £2.8 million! They provide a vital emergency service that would not survive without the help of the public and events like these, and the generosity of people like you and us.
We went to four gardens on our tour; one very large one at a house called the Wind In The Willows, two smaller gardens and one garden that was very long and divided into 5 ’rooms’.
The photographs in this album are of all four gardens and contain flowers, trees, people, a lovely young dog (a Rhodesian Ridgeback who was only seven months old), and some close ups of nice people who allowed me to put a camera in their face!
It was a very bright afternoon and strong sunlight is often not too good for photography, but I did my best to make use of shadows and backlighting when I could.
My special thanks to the owners of the gardens for allowing me to take photographs of their hard work!

Does anyone know what type of bird this is? It's about the same size as a sparrow. Apparently, despite its golden colour it's not a Golden Eagle.
I know I look serious but I have wanted to do a self-portrait since I got flickr. So at last!

That's almost embarrassing but that's how completely UN-photogenic I am.

Don't know what to do with your leftover roast chicken? Shred the meat up and make a grilled chicken wrap!
Blend chickpeas and yogurt to make a sauce. Take some mango, celery, shredded chicken, and fresh lettuce and line them up in the wrap. Drizzle a little of the sauce in the wrap and roll it up into a tight log. Throw it in a panini press and within a few minutes, enjoy your revitalized leftovers!
