i've tried to recreate a dish i've had many times at bar Joan in Santa Caterina Market, Barcelona. It's peppers, sausages and onions
The astute reader will notice that those are not raspberries in the photograph. Despite this fact, the dish was still delicious.
this particular griddle, the Blackstone 36" flat top groiddle, had a reputation for the grease trap, not to work so well in some instances. Some home brewed fixes have included owners using a straight piece of wire (like a piece of coat hanger) cut to fit into the hole and touch a corner of the drip cup, to route the oil into the over flow cup, and it works (so I'm told), but the Blackstone people decided to put a bit of spot weld on the underside of the drip channel, at the hole for the oils to run into, so grease and oil wont run back along the channel, in the event the user didn't have this end of the griddle, lower so gravity could do it's thing. the spot weld sort of helps keep the oil from flowing backwards. Simple and effective at the same time
160 of 365 -- Inaugural batch of waffles using the new-to-me cast iron waffle maker. FYI - Putting the cast iron into the hot coals of our fire pit for a couple of hours was an excellent way to burn off all the old stuff before conditioning.
The bakelite handles didn't make it feasible to use the self-cleaning oven method, and besides the smoke from the burn off was kept out of the house.
