Breakfast at The Griddle Cafe: we split the "Caballero" -- kind of a scrambled egg burrito -- without the chicken. This turned out to be the blandest dish we've ever had there; maybe typically it's the chicken that gives it flavor. But if that had been the first dish we ever tried (instead of, say, the stupendous Black Velvet Pancake), we might never have come back again. But whatever, we can scratch that one off the list!
After marinating for 12 hours, the filet is griddled for a few minutes on each side over high heat.
The pork, incredibly tender and juicy, is served with a light maple syrup and balsamic vinegar sauce. Wonderful!

This Used Imperial 24" ITG-24 Commercial Griddle Natural Gas is in good shape. It cleaned up well and came out of a working environment. It has a 1" thick highly polished steel griddle plate with a 24" W x 24" D grill area. It also has a 3" wide front grease trough, thermostatic controls, stainless steel front and sides, and 4" adjustable legs.
Flaws: The left side is worn and and has some surface scratches. Otherwise normal wear and tear.

I watched this woman making tortillas and heating them on a large iron griddle at the noon market at Pioneer Square in downtown Portland, Oregon. Yum.
