Gluten Free Cookie Pops were made so MAP could take them to school in order to enjoy them while the ordinary kids ate Gluten Full Cookie Pops

another healthy alternative for me. a pancake made with organic white spelt flour, inside some goat's cheese, avocado and tomato. yummm.

Things in my gluten free kitchen...... or why upon diagnosis Celiacs should be awarded a remodeled kitchen with extra storage space.

 

Not pictured but in the kitchen: almond flour, buckwheat flour, chestnut flour, corn flour, teff flour, and the multitude of different rices (long, medium, short, aborio, black, red, wild "rice", etc)

PS. People have been emailing asking what type of containers I am using. I purchased Lock & Lock airtight (and flip over/crash-bang proof!) tubs from our local Asian Market. (They are MUCH MUCH cheaper there.)

This is the first take. But I think it's pretty close.

 

This was such a lovely treat. The biscuit is soft with a bit of flakiness. I like soft biscuits for shortcake.

the pancakes rose beautifully in the pan but fell before i ate them -- i'd call them wet and heavy, not plush, soft, and airy like she does. but who knows, maybe i did something wrong. they were nevertheless DELISH, and they held together so well it was possible to spread one with apple butter and roll it up and eat it with my fingers.
