Baked sweet potato falafels are a healthier but just as tasty alternative to deep-fried falafels. Paired with lemony tahini sauce, lots of veg and a grain, they make a delicious lunch.

My breakfast on apple, banana and pancakes. Kinnikinnick gluten free pancake mix = easy + yum. :^)
p.s. I ate more than those two lil' pancakes.
Ingredients
7.4 oz (210 g) gluten-free oat-hazelnut flour mix*
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/3 cup sugar
4 medium ripe bananas
1 egg
1/4 cup milk
1/3 cup (75 g) melted butter

I am not a baker, I am a cook. To my mind, cooking is to art, as baking is to science; two very different disciplines, and never the twain shall meet.
That being said, I made a batch of gluten free brownies today, ostensibly just for the hell of it. Ordinarily I find what little GF baking I do at home to be somewhat lacking, but these came out fantastic.
This chocolate pudding is based on the classic chocolate cornstarch pudding, replacing the cornstarch with arrowroot powder. It is gluten free, dairy free, egg free and corn free.

I had a reader, Leen from Belgium, email me and post on the BBC website just now about the gluten-free bread recipe I wrote (you can see it here). So, I thought I'd make it again for Leen to show how it works. It is a bit strange, but the most important part of it is in paragraph 3:
"Over the next five minutes this liquid will turn into a sticky dough, as the linseed, cornflour and psyllium husk powder together absorb liquid and become gel-like."
I can't stress enough the importance of reading and following a recipe, even if you're experienced in baking. Slipping that way can catch the best of us. If you look at the step-by-step picture I've posted you can see the transformation that happens to the mixture.
