Quinoa Tortillas

Well this is what finally killed my oven. Baked provalone with herbs, chunky salsa with roasted veggies and Emmental, and spiced refried black beans with cheddar. Served with homemade gluten free Italian herb bread.

came across this recipe on recipezaar (http://www.recipezaar.com/179867), and oh my! my strawberries were a bit under-ripe, so even with the addition of some going uber-juicy raspberries, these were not as sweet as one would expect. which is a nice change!

 

but the best surprise after reading the recipe and being disappointed that it was only for 6 muffins, was no, that "6" has to be a typo. i got 16 out of my batch! w00t!

Baked cupcakes to freeze for snacks later. Saves those meltdowns of not being able to eat a lot of snacks!

Amazake-sweetened scones with peaches, cardamom, and amaranth. It has this lovely, delicate crumb and subtly sweet flavor. Yum!

Used a muffin tin. They were eh. Rather cakey for my tastes. Hence why they are already in a tupperware ready to be pawned off on unsuspectors.

The trouble with bringing brownies to work for taste-testers? Everyone eats them for breakfast... AND before you've remembered to take pictures for the blog! ARG! :) But oh - were they tasty!

started with this and adapted it. never had hollandaise sauce but i think i nailed it on looks alone.
