Finally, after many failed attempts... successful homemade pizza! This was better than any store bought pizza I've ever had and even rivals the stuff I've had in Italy. Giada knows her stuff.
So yesterday was my day off (and on my days off, I make food for Ray). I was kinda tired though, and it was late, like 8:30, so I wanted something easy and something that I didn't have to go to the store for ingredients. I happened to have most of the stuff for this—I just had to get milk and cream.
So, I made Venetian Mac & Cheese with a glass of Fetzer Merlot.
btw, this had Asiago, aged Parmesan, and Pecorino cheeses with Parsley and Herbs de Provence and heavy cream.
I had just taken this out of the oven, so it's still steaming.
Idk which angle I like better: this or the next. I'm thinking the next.

Filled to the brim with cheese and herbs. Ended up serving as a mini fondu. The leaves were way too chewy to eat.
i saw giada make this unbelievably simple butternut squash sauce the other day, and had to try it. i used frozen squash, drastically cutting down on the prep time, and made really easy vegan substitutions. the sweetness of the squash paired marvelously with my salty seitan. simple flavors that were simple to prepare (basically, a mommy wet dream).
For my first entry to the Recipe Round Up, I gave Giada's Pizza Pot Pies the singleton's treatment by using my newly acquired and adored Pyrex serve & store dishes rather than six ramekins (because I do not own those), using jar tomato sauce, instead of making my own and chicken breast marinated in Italian dressing instead of a roasted chicken.
* Purchased pizza dough (Cincinnati people, Meijer has some in the frozen food cases)
* 13 oz tomato sauce, approximately
* 2 large chicken breast marinated in Italian dressing, cooked & cubed
* 8 oz shredded mozzarella
* 1/2 teaspoon salt
* 1/4 teaspoon freshly ground black pepper
* 1/3 cup olive oil
* 6 tablespoons grated Parmesan
1. Preheat the oven to 400 degrees F.
2. In a large bowl combine the tomato sauce, chicken, cheese, salt, and pepper. Stir to combine. 3. Divide the chicken mixture evenly between dishes.
4. Roll out the pizza dough and cut circles with a pairing knife that are 1-inch wider in diameter than the dish.
5. Place the circles of dough over the filled dishes and press down to seal, making sure to pull the dough over the edge of the dish.
6. Brush the top of the pizza dough with olive oil and sprinkle with Parmesan cheese.
7. Cut a small slit in the top of the pizza dough with a pairing knife.
8. Bake until the pizza crust is golden, about 25 minutes.
9. Remove from the oven and let cool slightly before serving.
