Inspired by regional traditions of France and Italy, cooks, farmers, entrepreneurs, and adventurous eaters led the charge to revitalize and reinvent an artisanal world of food that had been largely abandoned in the United States. They turned to the fresh, local, and regional, and developed a new American cuisine.

 

The collection of objects featured in this display include Julia Child's copper bowl and whisk, which she used to whisk eggs on the first test episode of The French Chef in 1963 creating a run on such items that had not been commonly available in stores; a 2001 menu painted by Jacques Pepin for a meal he created at Julia Child's home; a fondue pot from the Scandinavian company Danko; a Teflon-coated crepe pan made by Nordic Ware; an espresso maker; an early food processor from around 1973 developed by American inventor Carl Sontheimer for Cusinart; a pasta machine from the early 1980's; and James Beard's chef's jacket from 1980.

 

FOOD: Transforming the American Table, an exhibit at the National Museum of American History, highlights the impact of of new technologies, to the influence of social and cultural changes, the exhibition explores the transformation of food and drink in post-WWII America.

 

The National Museum of American History (NMAH), administered by the Smithsonian Institute, collects, preserves and displays American heritage in the areas of social, political, cultural, scientific and military history. The museum, which first opened in 1964 as the Museum of History and Technology, is located on the National Mall in one of the last structures designed by McKim, Mead & White. It was renamed in 1980, and closed for a 2-year, $85 million renovation by Skidmore, Owings & Merrill LLP from 2006 to 2008.

 

The Smithsonian Institution, an educational and research institute and associated museum complex, administered and funded by the government of the United States and by funds from its endowment, contributions, and profits from its shops and its magazines, was established in 1846. Although concentrated in Washington DC, its collection of over 136 million items is spread through 19 museums, a zoo, and nine research centers from New York to Panama.

After processing, the texture looks fairly decent.

Fish the sprigs of parsley out of the soup and discard them. Here comes the extraordinarily messy part: blending the soup in batches in the food processor. It is highly recommended that you have a food processor that is larger than mine. At least, you need a very reliable apron. Everything within about three feet of the food processor will be wearing tomato colored polka dots by the time you're done with this part. Trust me.

Fishing oil-packed capers out of their jar. These capers are part of a tomato vinaigrette which will be poured over fish warm.

Pesto preparation in food processor. Chopping and mixing blanched herbs, grated Parmesan and garlic cloves. On out of focus wooden surface cup of extra virgin olive oil, ready to be poured into the work bowl. Out of focus cheesecloth next to wooden lazy susan.

I hate the texture of ground meat, so I blend it into oblivion before cooking.

Creamy leek and potato soup in decorative bowl. Flat-leaf parsley, grated Parmigiano-Reggiano and double cream garnish. Ground pepper and salt. Table spoon. Pressure cooker recipe with leek, celery, potato and chicken broth as main ingredients. Green surface. High point of view.

Mise en place criminis marmalade. Minced crimini mushrooms, unsalted butter, soy sauce, water, honey, tarragon and chives. High point of view.
