Add three table spoons of extra virgin olive oil to a large pan and put in courgettes. Cook for about ten minute till courgettes are nice and soft.

I volunteered for a couple of hours at the Blandford Farm Dig In! event. The farm is being planted for the first time in 20 years and this event helped kick it off.

The event was VERY eco friendly. The cups at Blandford are compostable!
