Chop about ten garden fresh tomatoes.

Several dozen community chickens were grilled as part of the neighborhood feast, which SF Maumee Valley shared

Add the tomatoes in to the pan once the courgettes are soft and slightly brown. Add black pepper and salt to season and hand tear some fresh basil leaves in to the pan. Mix it all in well and lower the heat a little, put a lid on the pan and let it simmer for about 5-10 minutes, allowing the juices of the tomatoes to flow out and infuse with the fresh basil. A lovely basil aroma should start to fill the air in your kitchen.

Together, City Green and our Junior Youth Build students prepared the soil. The program is all about supporting vibrant community gardens and greening initiatives in Passaic County. Add in a good squeeze of lemon juice to the pan, stir occasionally and then remove from heat after about ten minutes. Your dish is now ready to serve.
