Balsamic Vinegar is a very unique condiment, produced in limited quantity and linked to the geographical areas of Modena and Reggio Emilia.
The special climate of this region, with high thermic shocks between the very hot summer and the chilly winter, enables the Lambrusco and Trebbiano grapes to ferment and maturate in the best conditions, according to the traditional methods.
The careful multi-step process of production starts from the pick-up of grapes by hand, "soft" pressing, filtered, cooking & cooling, decanting, many years of wood barreled ageing, transfers, tasting, up to the bottling.
Since 1871, the Leonardi family have meticulously followed all the unique production phases of this ancient condiment, brown and velvety very versatile and magical balance of sweet and sour flavours. To obtain sublime Balsamic Vinegard the family needs above all patience, devotion and respect for the ancient traditions which have been handed down for generations at Leonardi Balsamic farm of Modena.
Etymology of the word balsamic, from Greek balsamon then passed to Latin balsamum, refers to the popular beliefs about the healing properties of balsamic vinegar. In pharmacology, in fact, the term balsamic indicates preparations with antiseptic and anti-inflammatory properties.

It was incredibly touching to witness the interaction between this cow bison & her newborn calf. The baby couldn't stand for more than a minute or two, but mom kept trying to encourage it to stand & nurse. I realize experts say animals don't feel LOVE...but I think they're wrong. Seeing these two convinced me LOVE is felt by animals, too!
