I filled vanilla-flavored crust with the mixture of lemon curd and whipped cream, then topped with rum-flavored whipped cream. Lemon curd recipe was adopted from Pierre Herme's recipe in his book 'Macarons'. The crust is very soft and flaky, not too sweet or buttery like most American tart shells. This is my favorite dessert now ...
* Ingredients for tartlet shells (I made 12 of 2.75 inch mini tart shells): 130g pastry flour, 20g ground almonds, 70g butter, 35g sugar, one large egg york.
* Ingredients for lemon curd: 46g egg, 44g granulated sugar, 26g lemon juice, 1.5g lemon zest, 65g unsalted butter (plus whipped cream for the lemon filling)
Visit to Surta Dairy shop in Karnal, Haryana, India, 6 Mar 2016. The owner, Balinder Kumar, started the shop only 5 months previously, after getting training at Karnal's National Dairy Research Institute and buying a $1,000 multi-purpose dairy product machine. Kumar had been a dairy farmer before starting his shop, but selling milk was not making him much of a profit. Now his wife and veterinarian brother take care of the 10 buffaloes and 15 dairy cows on his dairy farm while he runs the dairy shop in Karnal, where he produces all the dairy products he sells in his shop. The shop opens at 7am each day and does a brisk business. His products, like most dairy products in India, are not branded. He says that more and more people are too busy to make curd and other dairy products themselves, so they come to his shop and others like it (every street in Karnal has 3–4 such dairy shops) to buy their milk-based foods every day. Originally named “She-liao island”, Hoping Island is the doorway to Keelung Harbor. It was a settlement of Kaitaglan Tribe in the early times. Currently, a seashore Park was set up along the coast.
Inside the park, one will see important terrain of marine abrasion, including marine cliff, abrasion platform and abrasion fosse as well as the famous “bean curd rock” and pedestal rock. Apart from the spectacular terrain, the body fossil and trace fossils are considered treasures for geological studies. Be sure to take a good look at the strand plants for it is amazing that they can survive under the unfavorable conditions.
During the ebb, one can step on the abrasion platform to see the strand plants and all the different rocks and stones. Take a break to sit down on the rock to listen to the waves and enjoy the amazing gift of nature.
However, please do not go down to the marine cliff for the rock might break down at any moment.

Purchased a cheesecake. Topped it with homemade Lemon Curd and a sprinkling of shredded coconut. So good!

Oh my gosh, these are simply delicious.
Also, move over you stupid Donna Hay macaron box mix (which failed miserably for me); homemade macarons from scratch are the best!
I got this recipe from a $9 book on macarons from Kmart. I was soooo pleased with how these turned out. The bottoms are perfect; the feet are not perfect, but still great; the tops, although not high and rounded like I like them, they are crisp and chewy.
There is even *liquid* food coloring in the shells - *gasp*!! As well as lemon zest. I ground whole almonds to make my own almond meal.
The filling is mascarpone which is mixed with lemon zest and lemon juice. Also in the middle is a generous pile of (store-bought) lemon curd.
THE best macarons I've made to date (this is my 4th batch) and I intend to make many more from this cheap book I picked up last week! :)

It is unbelievably easy to prepare lemon curd at home. This is my 100% foolproof recipe:
You will need (for a small jar):
2 eggs - room temperature
1/4 cup freshly squeezed lemon juice
1/3 cup sugar
60g butter, cut into small cubes
Mix the eggs, lemon juice and sugar in a small pot and cook - always whisking - over low heat until the mixture thickens. Don't allow the mixture to come to a boil or it can curdle
Remove it from heat and add the butter cubes, one at a time, whisking well until creamy. It will look a bit runny but it will thicken when cold. Keep in the fridge.
