Production of artisan cheese in the Sicilian countryside.
Bottom:
125 g of flour
50 g of cocoa powder
100 g room temperature butter
1 egg
50 g of sugar
Curd filling:
400 g of vanilla-flavored curd
50 g of sugar
2 eggs
2 tablespoons of starch
3-4 apples
a handful of lingonberries or 100 g of raisins
2 tbsp roasted almond flakes
For the base, mix room temperature butter, egg and sugar until smooth, add flour mixed with cocoa powder. Press the dough into a cake tin with a diameter of 24 to 26 cm. Pre-bake the base in a 175-degree oven for 4-5 minutes.
For the filling, mix curd, sugar, eggs and starch. Pour the filling onto the pre-baked base. Sprinkle with lingonberries or raisins. Clean and slice the apples and place on top of the curd filling. Bake in a 175-degree oven for 35-40 minutes.

Niqui has also been busy this week making Lemon Curd. We had some of this on our toast this morning and I can tell you it is VERY nice.
I love me some lemon curd, especially on toast. Or in a tart. Or even straight out of a jar - not that I would ever do that, no sir.
This particular variety is a New Zealand brand called Barkers - so good.

It was my birthday a few days back. But due to Covic- 19 pandemic, My family is staying home! Since we couldn't go out & celebrate, so I made a cake with simple decoration!
I baked Lemon moist cake a day before. The next morning, on my birthday, I made American buttercream & lemon curd. I mixed a few of these curd with the buttercream for the tangy flavor & the rest for toppings.

This is an old school curd breaker used in the production of cheese. I believe It was used to cut the curd into smaller pieces which then allowed the liquid whey to be removed.
Ron made some lemon curd today...we almost always have some on hand and enjoy it on plain cakes, shortbread cookies, etc.
I've been thinking for a while about using some of my lemons to make lemon curd and today I finally made some. It's been raining the whole day, so I did have to go outside in the rain to pick the lemons, then because I didn't pick enough the first time, I had to go out a second time :-)

Bolehill Quarry fungi - I'm never sure if these are Fly Agaric that've lost colour or another type of Amanita - there where lots similar that were red in the centre fading to orange/yellow at the edges

Both tiers are lemon buttercake with fresh lemon curd and french vanilla bean buttercream. Covered with white chocolate fondant. Gumpaste flower spray, clutch and shoes. For a girl turning 20.

Módena (Mòdna en dialecto modenés; Modena en italiano) es una ciudad italiana, capital de la provincia de Módena, en la región Emilia-Romaña. Cuenta con una población de 184 973 habitantes. La catedral, la Torre Cívica («Ghirlandina») y la Piazza Grande de la ciudad están declaradas Patrimonio de la Humanidad por la Unesco.
Módena queda en la llanura padana, y está rodeada por dos ríos, el Secchia y el Panaro, ambos afluentes del Po. Su presencia está simbolizada por la fuente de los dos ríos, en el centro de la ciudad, obra de Giuseppe Graziosi. La ciudad está conectada con el Panaro a través del canal Naviglio.

Entre 1179 y 1319 se construyó la torre Ghirlandina asociada con el Duomo. Su nombre de Ghirlandina -guirnalda- resulta de su forma y recuerda la torre Giralda de Sevilla.
Durante más de dos siglos, la familia Este tenía como sede el Palazzo Ducale (palacio ducal). Hoy en día, este palacio recibe la Academia militar.
El Palazzo Comunale –ayuntamiento– cuya la fachada está en la Piazza Grande abarca un conjunto de edificios más antiguos. Dentro del edificio se encuentra la Secchia rapita –el cubo raptado- uno de los símbolos de la ciudad. La estatua de la Bonissima, símbolo de bondad, está posada en la esquina exterior del Palazzo Comunale.
Iglesias. Módena es una ciudad rica en iglesias, se cuentan más de quince en el casco histórico. También es importante nombrar a la iglesia de Santa María Pomposa, la iglesia del Voto o la iglesia de San Vicenzo. Existe también una sinagoga ubicada cerca del Palazzo Comunale.
En el mercado Albinelli se reúnen cada día productores locales de vinagre balsámico, jamón curdo o queso, entre otros.

Modena is also known in culinary circles for its production of balsamic vinegar.

Creating a ball of cheese curds one at a time to then be added into the press and salted. A small cheese ball at a time allows you to gently remove some of the whey ahead of going into the press.
I have lunch with my mother every Friday. We had a big meal at a bistro near my office on yesterday, was really good. & didn't need dinner on the evening.
