煮食爐與肺功能
好友剛買了一個小蝸居，問我廚房用煤氣煮食爐好還是電爐好。少入廚房的我無法講出哪種煮食爐較好，但最近看了一份醫學研究報告，使用煤氣煮食爐的食肆廚房，空氣中的懸浮粒子及二氣化氮等污染毒物，比電爐廚房高得多，相信這正是導致煤氣廚房工作的廚師，肺功能比較差的禍因。
該項研究由中大社區及家庭醫學系進行，共有53中式食肆、共393名廚師參與。研究人員分別量度了廚房環境內的空氣污染物濃度，又為廚師們作肺功能測試。結果發現，使用煤氣煮食爐具的廚房，一氧化氮、二氧化氮及一氧化碳的濃度，比電爐廚房高一倍多至七倍多不等，而懸浮粒子則多近八成。
領導研究的黃子惠教授指出，電爐廚師的呼氣容積及肺活量均比較好，反映他們的肺功能較佳，而在煤氣爐廚房工作的廚師，較多出現喘鳴、有痰、咳嗽及喉嚨不適等症狀，相信「元兇」就是煤氣燃燒時釋放的污染毒物。
事實上，過去的研究已顯示，二氧化氮會刺激肺部，減低呼吸系統對病菌的抵抗力，甚至有可能引致肺部組織結構變異，而一氧化氮在空氣中很快便會氧化成二氧化氮；一氧化碳亦是已知可損害呼吸系統健康的廢氧，甚至可以使人中毒死亡；至於微細的懸浮粒子則可以積聚在肺部深處，可誘發呼吸系統毛病及破壞肺部組織。
家中廚房的使用率當然遠低於食肆，但為免污染毒物影響到健康，煮食時記得要通風，例如要打開窗、開抽油煙機或抽氣扇，以防廚房變成「毒氣密室」。

I made these breakfast taco cups out of an old WW cookbook.
I started with rolled flour tortilla dough that I happened upon at our grocery. I cooked the dough in a frypan to make tortillas, then pressed them into custard cups. Then I baked the cups for maybe 10 minutes, to make them set.
The filling is egg beaters [doctored] scrambled with re-heated taco meat. A tablespoon of salsa, a sprinkle of Monterrey Jack cheese, topped with cheddar cheese for color, then put under the broiler.
Yum! They were like breakfast tacos, but with a crunchy shell.

Last week we gave some lemon poppy seed cookies to our 80+ year old neighbors. They are always so kind and thoughtful we wanted to show them how much we appreciate them. Well this morning they gave back the container we had sent the cookies over in full of dried apricots from their very own trees!
Life can be full of stress and problems and then something like this happens and you realize that life is pretty darn good.

A tiny sake cup lit from behind with a bare flash. Sepia tint added with AlienSkin Exposure.
Strobist info: SB-28 about 2 feet behind the cup on 1/64 power triggered by an eBay remote. No diffusion, just a bare flash fired toward the camera.
