Denver, Colorado. My Vistage group had a holiday party at the Stir Cooking School with Chef Edgar Papke.
I decided to use part of roast for Beef Stew. So I shred about half of the roast beef, added corn, kidney beans, green beans, onions, some of the leftover roasted carrots and potatoes, 2 cans of diced tomatoes, the broth and juices from the crockpot, and the rest of the carton of beef broth. I let this simmer and added a few more bay leaves, then salted and peppered to taste. Serve with corn bread or your favorite sourdough, etc.
Cooking in a strange kitchen is hard. Cooking in a poorly equipped strange kitchen where you are also expected to keep kosher is just silly.
