I decided to bake cookies for my class for Friday's Halloween party.
Pillsbury magic.....these are so easy and quick! They used to come in logs and you'd have to slice them first.
Now they are definitely ready-to-bake.....they come pre-sliced.
Best of all, the kids love 'em.
Chocolate wafer cookies sandwich a vanilla cream, imitating a childhood favorite. Though thanks to Dutch-processed cocoa and a homemade touch, these are even better!

These are super small. I used mini bento box cutters; they're supposed to be for cutting small veggies and food for lunches, rather than cookies. But they work. :)
I hadn't been baking for a while but as it was grey and cold outside, I thought it was the perfect occasion to fill the house with the smell of warm cookies (comfort sweetsare always necessary to get through those days).

My daughter and I made some Christmas cookies today. They really turned out well. Tomorrow we are making another kind and some peanut brittle. It's going to be raining all day here, so I guess we'll get high on sugar! Should be fun.
This is a very old cookbook of mine. I love it, I had forgotten about it, I have a thousand so it was on the shelf with the others. I forgot how wonderful and easy these cookies are and it's perfect for John and myself. We only need a little sweet treat now and then, not dozens and dozens of cookies which we invariably eat. I have changed up the recipe to suit my taste.
1 1/2 cups butter
1 1/2 cups sugar
1 1/2 cups brown sugar
3 eggs
2 teaspoons of vanilla ( we make our own!)
Cream the butter and the sugar, then add eggs one at a time along with vanilla, cream well.
Sift together 1 3/4 cup flour
1 1/2 tsp salt
1 1/2 tsp baking soda
1 1/2 tsp cinnamon
1/4 tsp allspice
Add to creamed mixture and mix completely. Then add:
4 1/2 cups rolled oats
1 cup of raisins
nuts if you wish.
Divide dough into 4 portions, Shape into logs on wax paper or freezer paper, roll up, label and freeze.
To bake, slice a 1 inch piece of dough, then cut it into four pieces. (make as many or as few as you like) Place on a parchment lined cookie sheet and bake at 350 F for about 10 minutes, cool on rack and enjoy. With the butter, they cook up very lace like, let them cool on the tray before you remove them...they will be crispy and buttery and very thin...lovely with a cup of tea!
