These cookies are great for using up sub-optimal eating bananas. The consistency is a bit chewier than a muffin, not as crumbly as cakey cookies and they stay pretty moist overall. They are what I like to refer to as excellent ‘breakfast cookies’ for the following reasons:
1) the texture is perfect with coffee
2) they are not too sweet
3) the banana and oats give the impression of healthy eating
If you really like ginger, try doubling it because the flavor baked away to a pretty weak undertone in the end.
P.S. - I am especially proud of this post because this photo is actually mine (not my ghost photographer’s work) and, at the risk of appearing overly self-congratulatory, I think it looks pretty good if I do say so myself…

This ornament was given to me by a former co-worker. My nickname at work for a while was "Cookie Monster" due to my love for chocolate chip cookies from a local cafe. I hang it on our tree every year!

All 86 boxes of cookies are now wrapped. I just now have to put my cards together and then deliver them. Lots of work but it's been fun. I'm hoping to start delivering them this Sunday. :D

The best days in 3rd grade were the days Mom had warm cookies and cold milk waiting for me when I got home from school. I'd walk the 3 blocks from Short Hills Grade school on Hobart Avenue to 30 Haddonfield Road. Home Sweet Home, especially when there were cookies and Mom waiting for me with a big hug and a kiss.

Today in the afternoon I wanted to do a simple cookie splash, but after some attempts, I decided to get the cookies involved in the story of the shot!! This final picture is the combination of two shots. Hope you like it!!

Linda was the champion of cookie bakers. I am fortunate that when Linda's health got to the point were she could no longer make cookies she told me her secrets and directed me through the process so I now can continue the cookie baking. But unfortunately my cookies will never be as good as Linda's.
