Banana Oat Breakfast Cookies ~ no sugar added ~ egg, flour & dairy free!!
makes 12 BIG breakfast cookies
or 16 regular sized
Ingredients
1 1/2 cups oatmeal, quick or old fashioned ~ uncooked
2 ripe bananas, mashed with fork until creamy
1 cup unsweetened applesauce (Optional, I did not have it for this batch)
1/3 cup raisins, or to taste (optional ~ you can add in some dried cranberries or dried cherries if you include the use of dried cranberries in your diet.
(Optional, 1/4 cup chopped walnuts, toasted or regular, if you prefer)
(Optional, I've been using 3 Tbsp shredded coconut)
1 tsp vanilla extract (Optional)
1 tsp cinnamon (Optional, or more, to taste)
** for those of you who don't like bananas, try using 2/3 cup pureed fresh or frozen mango in place of the mashed bananas. I've used it in place of the bananas & it's an acceptable substitute, just maybe not quite as sweet.
***for those of you who don't eat nuts, just make the recipe without
them. No need to replace them with anything else.
Directions
Preheat heat oven to 350 degrees.
Mix vanilla extract & cinnamon into the applesauce.
Blend applesauce mixture with all other ingredients & let sit for 10 minutes
Drop cookie dough, by spoonfuls, onto a parchment paper lined cookie sheet & flatten cookies into rounds.
Bake approx. 20 - 30 minutes, or until golden & done.
Remove from oven & let rest on cookie sheet for 5 minutes, then move to cooling rack.
Store in a covered container when completely cool.
Enjoy for breakfast, for an afternoon snack with tea/coffee or just about anytime!
Bella and Amanda made cookies the other day. They made them from scratch with the easiest peanut butter cookie recipe. 1 cup peanut butter, 1 egg, 1 cup sugar. Mix. Bake at 350 (if they are all the same size) for 10-12 minutes or until done.
Well, cookies are cookies!!!!

I wanted to make up some cute Valentine's day cookies but ones that were a little different than just hearts. These are sugar cookies with my own marshmallow rolled buttercream.

As it often happens to expats, there is always something that you miss and often it is the food. I can live perfectly well without a Christmas tree and the presents found beneath it but seeing this season come and go without snow still feels wrong and I suddenly get a craving for cookies. Fortunately, at least for the part of the cookies, there is something I can do about and I did.
It took up quite a bit of time to finish 5 different kinds of cookies but it was worth it. The only disadvantage of having made them myself is the knowledge of what is inside it and let me tell you, other than sugar, flour, butter and some eggs, there is not much more to it. In other words, it's certainly not helping that diet you have planned for the New Year!
These gingerbread cookies are the first cookies I ever decorated. They where for my son's kindergarten class. The kids where so exited when they saw the cookies (specially girls).
These lions were inspired by an image I saw online. I made them for my daughter's school awards assembly pot-luck.
