Finally baked Snowball Cookies...there are other names for this cookie...but due to the snowfall this past weekend...this name is appropriate.

Today started with snowing, but it soon stopped. It's been very windy all day so I stayed in and decided to make some cookies. Top left crunchy peanut, top right oats with coconut and bottom cookies with raisins.

Day 14: These are my favorite socks...I got them for Christmas last year from a friend at work. They're chenille....very soft and very cozy :)
Notice the many golf-ball sized divots in the body of this elephant seal. These were caused by the terrifying cookie-cutter shark, the existence of which I would have preferred to remain ignorant. Elephant seal mother and nursing pup, Piedras Blancas, California.
I normally don't do food shots, but I could not resist taking this shot before eating my afternoon tea today! Absolutely nothing was deliberately set up here. My dearest brought me these with my afternoon cup of coffee, and this was exactly how they were placed. She did not notice anything unusual on the plate. Just cookies!
For the record - chocolate chip (home-made) and gone in a flash! Delicious.
My #glutenfree models for today .My baking skills are very basic but with Nir's help we have been able to handle those quite well.
Got takeout from Panda Express for dinner tonight. I had to chuckle when I opened my fortune cookie. Why don't I ever get one that says, "great wealth is in your future" ?

some of the neighbour's hamsters came to visit again! this is Cookie, the proud mommy hamster of about a dozen.
she's so nice to hold. :P squishy! she's just 3g heavier than my rather large Mint Tea, but she looks 4/3 of his size!
I had mint buttercream leftover from a cake and I didn't want to throw out yet another batch. So I made cookies!
These Christmas cookies are my very first stab at cookie cutter cookies -- don't know how I got to be this old without the experience! I decorated about 72 of various designs with fondant for friends, coworkers, family and, of course, my mailman. I really enjoyed working on the smaller canvas and, unfortunately, the cookies were very delicious, which made it oh-so easy to eat my mistakes. I hope everyone had a wonderful holiday season and have had time to put your feet up for some well-deserved rest.
I love these Tolcarne Ginger cookies and despite the title this is a rustic cookie... big on flavor and crunchy but chewy due to the Lyle's golden syrup and stem ginger content. Wonderful with a cup of Queen's Red Roses tea.
2 1/2 Cups All Purpose Flour
1 Tablespoon + 3/4 tsp Baking Powder
1 tsp. table salt
1 Cup sugar (I use baker's sugar - extra fine)
1 Tablespoon ground ginger (I use organic)
1 Tsp baking soda
1/2 Cup unsalted butter (I use organic)
1/4 Cup Lyle's golden syrup
1 egg, beaten
2 pieces stem ginger, drained of syrup, minced
Steps:
1. Preheat oven to 325 degrees and line a baking sheet with silpat or parchment paper;
2. Combine all dry ingredients into a mixing bowl, set aside.
3. Gently melt butter with golden syrup - cool slightly. Pour onto the dry ingredients and immediately add the egg and minced stem ginger and mix well with a wooden spoon or a swedish dough whisk to make a dough.
4. Using your hands, roll into walnut sized pieces of round dough. Place well apart on cookie sheet and then flatten each ball slightly with 3 fingers and then flatten again with those fingers at 90 degrees. Don't squish them too much - about 1/4 inch is about right as they will spread as they cook.
5. Baking for 15-20 minutes or until crisp and golden. Let cook on wire rack. Store in airtight tin or freeze. Makes just over 2 dozen nice sized cookies.
These are a wonderful cookie and one of my favorites.

I spent an afternoon making dog cookies for Shizandra. It was her Christmas gift from me. They are made with Coconut flour et al, grain free and very healthy. She loves them.
Cookie is a maltese adopted from a friend, who had to give him up. He was about four months old in this photo. Cute tongue :-)))

Rainbow cookies from Viniero's. They are sooo good, but they are not really rainbows! Who thinks that a rainbow is pink-yellow-green? I am determined to make some REAL rainbow cookies. I hope they will taste nearly as good as these.
