Had to stay in today to take delivery of a new piece of furniture; it came late morning so I had the afternoon free to do some baking. I found this very simple cookie recipe online and thought I'd try it. Here's the result.

3 Ingredient Nutella Cookies (makes 14-16)

150g plain flour

240g Nutella

1 large egg, beaten

Heat oven to 180 degrees celsius and line a baking sheet with baking parchment.

Add all ingredients together in a large bowl and mix until well combined. The mixture should form a thick dough but should be moist enough to form into balls.

Roll into evenly sized balls, put onto baking sheet and flatten slightly with a fork or the bottom of a glass (I used a fork).

Bake 8-10 mins until cooked around edges and slightly soft in the middle.

Remove from oven and let them sit for 5-10 mins before removing from baking sheet and cooling on a cooling rack.

Enjoy!

30 rainbow/cloud cookies for our twin nieces bday this next weekend. Will be shipping these to CA. Sydney and Riley are the bday girls. Kylie is our other niece. Sugar cookie with MMF and royal icing rainbow and cloud detail. It took me awhile to get the clouds the way I wanted them. LOL...and for such a simple cookie, I swear it took me FOREVER to do those rainbows today!

We were REAL tourists and loaded up two cars and went to Hobby Lobby!! We had several first timers with us and it was all very exciting!! We actually had someone take our picture outside the store with the sign and the woman who took the photo said "You realize it's just a craft store, right?"

We went in like a wave with lots of excitement and caused quite a commotion (and probably the discussion of many dinner conversations at other home that night). We were like kids in the toy department at Christmas time!

We all found lots of new inspirations and added to the stores profit margin that day!!! It was fun!!

It's been ages since I last baked a batch of cookies. These I'll take to the reception after the Memorial Service tomorrow. They are a real crowd pleaser and easy to make.

Here's the recipe:

South Pole Cookies

1/2 cup margarine - (1 stick)

1/2 cup butter - (1 stick)

3/4 cup brown sugar, packed

3/4 cup granulated sugar

2 large eggs

2 tsp. vanilla extract

2 1/2 cups flour

1 tsp. baking soda

2/3 cup chocolate chips

2/3 cup white chocolate chips

2/3 cup butterscotch chips

1 cup pecans, chopped

Preheat the oven to 375 degrees.

Cream the margarine and butter with the brown and granulated sugars. Add the eggs and vanilla and beat until fluffy.

In a separate bowl, combine the flour, baking soda and salt and add to the creamed mixture. Stir in the chocolate, white and butterscotch chips along with the nuts.

Drop rounded spoonfuls of batter 2 inches apart onto a baking sheet. Bake the cookies until they're pale golden brown, 12 to 14 minutes.

Makes about 48 cookies.

Sugar cookies are so easy to make. WHY does anyone buy those precut, premade, all you do is bake, cookies from the store? Where's the fun in that?

Come over to my house, I'll show you how to make some cookie dough in just a few minutes. There's something so satisfying about rolling out dough and cutting it out. I don't even mind the flour getting on the floor and in my hair, as inevitably happens.

In fact, I'm going to share my recipe with you:

1 cup butter, softened

1 1/2 cups sugar

1 egg

1/2 tsp almond extract

1 1/2 tsp vanilla extract

2 3/4 cups flour

2 tsp baking powder

1 tsp salt

Preheat oven to 400 degrees.

Cream together butter, sugar, egg, and vanilla and almond extracts. In separate bowl mix together flour, baking powder, and salt. Add flour mixture to the butter mixture a cup at a time, mixing after each addition. Divide resulting dough into two balls. Roll out dough on floured work surface to about 1/8 inch thick. Use cookie cutters of choice. Bake cookies about 6 minutes, or until very lightly browned.

To make icing for cookies whisk together 1 cup sifted powdered sugar and 1 1/2 tbsp milk. May add a drop of vanilla extract for flavoring or some food coloring. Wait for cookies to cool before decorating. Spread the icing with the back of a small spoon, then use it as a base for your decorations. The icing will harden in about 10 minutes, so decorate fast!
