Ingredients
# Mug of trimmed rhubarb
# Large mug of strawberries - larger ones quartered
# 80 gms caster sugar
# 80 gms crystalised ginger chopped finely
# juice of a lime
Method
Cut the rhubarb into short strips (2-3 cm) and cut the strawberries into quarters ... or more if larger. Chop the crystallised ginger finely, add the sugar to the bowl and shake. add the lime juice and leave to marinade for 10 minutes. Bring to the boil and simmer over a low heat for 15 minutes.
Serve with Greek style yoghurt.
Made with whole grain bread. Taken with an iPhone because it was gone before I could reach for my dslr.

I've been wanting to try out some new recipes for cupcakes and was sooooooo pleased with the way these turned out.
With Strawberries in plentiful, I made a huge pot of Compote which was then swirled into my butter-cake batter and baked. And to complete, they were dressed with Swiss buttercream and a generous drizzle of compote on top. My not so fussy critics gave it a whopping thumbs up! This one is a definite keeper . :)
I absolutely LOVE blueberry syrup/compote. Now that I've made it at home, I can't believe I never thought to do it earlier! So easy and yummy =D.
In terms of the food styling, The blueberries at the very bottom are starting to bug me. I dripped syrup down the sides of the toasts but they're so glossy it came right off haha. Still trying to figure out how I might've improved the compote placement instead. Ideas?

Pistachio semifreddo, blood orange and strawberry compote. A great dessert for those without an ice-cream maker. Here is a recipe you could try (a little different to what I have here).
This was my first time making panna cotta, and I must say, I'm in love! I used a recipe for blackberry panna cotta and substituted the Pakistani mulberries we have bushels of this time of year. I already had homemade mulberry syrup on hand, and even my own mulberry liqueur to substitute for the creme de cassis in the recipe. It was not difficult at all, and the result was heavenly! I think this is a dessert form ripe for flavor experimentation.

I went to a fundraiser this past weekend at a winery where I enjoyed a number of gourmet dishes paired with wine.
For dessert we had individual baked French Key Lime pie with berry compote paired with Sprucewood Shores Estate Winery Sweet Select Riesling Traminer 2013.
With the weather hot and sunny all summer long, gelato seems like the perfect choice. Homemade peach gelato made with fresh peaches - silky smooth, creamy, delicately and perfectly peachy! High on my list of faves.

The fall of 2022 I did my 3rd major cycling tour. I began my adventure in Montreal, Canada and finished in Savannah, GA. This tour took me through the oldest parts of Quebec and the 13 original US states. During this adventure I cycled 7,126 km over the course of 2.5 months and took more than 68,000 photos. As with my previous tours, a major focus was to photograph historic architecture.
