A vegan coconut tapioca covered with almonds, peach compote, agave, and topped off with an edible flower. A wonderfully refreshing treat on a warm afternoon!
It feels like it's been ages since my last food photo on Flickr. So here's my breakfast from this morning. I made vegan buckwheat pancakes layered with blueberry chia compote.
Here's the recipe:
Serves 1 person, makes around 7 pancakes but depends on how big you make them.
Ingredients:
To make the egg substitute: 2 tbsps ground flaxseed/linseed meal + 6 tbsps water
1/2 cup of buckwheat flour
1 medium banana
1 tsp baking powder
3/4 cup almond milk
Add the flaxseed and water together and stir. Leave it covered in the fridge for a minimum of 15 minutes.
Combine the flour, almond milk, banana, flax eggs, baking powder in a bowl.
Add coconut oil in a heated saucepan and put some of the batter in and cook.
Make sure the saucepan is not too hot, or the pancakes will burn. These pancakes are really different from the (white flour + sugar + milk) types so they must be cooked slowly. DONT BURN THEM. THEY TASTE GOOD AND ARE HEALTHY!!!!!!!!! Here's why:
Buckwheat flour is high in protein, this means it keeps you fuller for longer. Buckwheat also contains magnesium which aids in blood flow and nutrient delivery, thus relaxing blood vessels and lowers blood pressure. So in other words it's good for your cardiovascular system (source).
Flaxseed is a superfood which is high in omega 3 fatty acids, fiber, protein and vitamins and minerals. Flaxseed promotes health through lowering high cholesterol, stabilising blood glucose levels and boosts your immune system (source).
You can find flaxseed, almond milk, buckwheat flour at any heath food store and even at Coles and Woolies now. If you're not able to find them though instead of almond milk you can use soy milk, quinoa milk or rice milk. Buckwheat flour can be substituted for rye flour or spelt flour but they pancakes won't be as fluffy. Don't use wholemeal flour!!!! I used to once and I could not eat the pancakes. It just didn't work. The flour was too light. I think you need to use heavier flours.

Recipe: serves 2
Berry compote:
1/4 cup blueberries
1/4 cup raspberries
1/4 cup blackberries
2 tbs maple syrup
1. Heat berries and maple syrup over medium heat until mixture comes to a simmer and berries release their juices
2 thick-cut (2 cm) slice of white study bread (milk loaf/challah/brioche)
2 eggs
1/2 cup milk
1 tbs sugar
2 tsp vanilla
1 tsp cinnamon
Butter for frying
1. Preheat oven to 170 deg
2. Whisk together milk sugar eggs vanilla and cinnamon in a shallow bowl.
3. Dip one piece of bread into the bowl of custard until soaked completely on each side (about 2-3 mins per side)
4. In a frying pan over med high heat heat a knob of butter until foaming. Add soaked bread and fry until underside is well-browned. Flip and cook remaining side.
5. Place french toast in preheated oven for 4-5 min until hot and cooked through. Repeat with remaining slice of bread
6. Serve hot with berry compote and more maple syrup

The first filling I made was a fresh raspberry basil compote, which I used to stuff the dumplings and serve alongside. Delish! also tried stuffing them with a little compote and some intense, 82% black chocolate, and then made more which I stuffed with cherry preserves.
It was my first try and I used a little too much batter for the bottom half I think, so they weren't as perfect as they could have been. Later batches looked much better but by then we were into devouring, as opposed to picuture-taking!
Even though I’m a chocoholic, my fav’s were the ones without the chocolate. I had used very dark, 82% chocolate, and having tried this, I would now opt for a more mellow, 70% chocolate. But my next batch will be with caramelized pears ....
PS I used the Williams-Sonoma recipe for the batter, which was delicious but makes a lot! The recipe and pan should come labelled with the warning that these little stuffed pancakes are addictive!

A vanilla cupcake base with apple mousse, spiced white chocolate whipped ganache and spiced apple compote.
Banana, apple, blueberries, mandarine, homemade fruit compote, greek-style yogurt, homemade granola, spoon (optional!).
"Noire" Entremet - - chocolate shortcrust pastry, almond chocolate "Joconde" sponge cake soaked in cherry liqueur, chocolate ganache, cherry compote, white chocolate mousse, chocolate mirror glaze.
Actually, it was "sweet sunday" but no matter. Once Lent begins, this will be a distant memory, hence the processing. :)
I made a maple bundt cake with a filling of my homemade apple walnut compote. It was a delish tea time. Now, after this is gone, let the fasting begin!

Recipe:
1/4 cup sugar
2 tbs Meyer lemon zest
1/2 cup cake flour
1/2 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1 egg
1 cup minus 2 tbs buttermilk
2 tbs Meyer lemon juice
2 tbs melted butter
1 tbs poppy seeds
1. Rub the lemon zest into the sugar until it has released its oils
2. Whisk together dry ingredients in a bowl. Whisk together wet ingredients in a bowl.
3. Add wet to dry ingredients and fold until just combined and no streaks of flour remaining. Fold in poppy seeds. Let batter rest for 10 min
4. Preheat a greased non-stick frying pan, until it has hot enough to scatter a few drops of water.
5. Cook 1/4 cups of batter, until surface of pancake forms bubbles that pop, and underside is well browned.
6. Flip pancakes and cook until remaining side is well-browned. Repeat with remaining batter.

Seville orange (or bigarade) is a widely known, particularly tart orange which is now grown throughout the Mediterranean region. It has a thick, dimpled skin, and is prized for making marmalade, being higher in pectin than the sweet orange, and therefore giving a better set and a higher yield. It is also used in compotes and for orange-flavored liqueurs.
Once a year, oranges of this variety are collected from trees in Seville and shipped to Britain to be used in marmalade. However, the fruit is rarely consumed locally in Andalusia
I can no longer eat anything made with Seville oranges:
Bitter orange may have serious drug interactions with drugs such as statins in a similar way to grapefruit.
Since I am not allowed to eat grapefruit, I assume that is also the case for Seville oranges!!!

I am not longer on statins, so I can eat tart citrus fruit and berries, such as cranberries. Yea!!

The Seville orange, botanically classified as Citrus aurantium, is a sour orange variety commonly used for its oil extract. The Seville orange, also commonly known as bitter orange or sour orange has been used in traditional Chinese medicine to treat nausea, indigestion and constipation. The crushed fruit and macerated leaves will lather when mixed with water and is used as a soap substitute in the Pacific Islands. The Seville orange peel, when dried and concentrated, contains a chemical similar to ephedra and has been used in many modern weight-loss products.
Description/Taste
Although the Seville orange smells like a true orange, it does not have many other obvious award winning virtues. Its rough, thick and bumpy deep orange colored peel clings tightly to its pale orange translucent flesh, making it hard to peel. It is sour, tart, sometimes bitter and laden with seeds. It has two primary attributes: the peel contains fragrant essential oils and its flesh, when ripe is extremely juicy. The most common usage for the Seville orange is for the production of marmalade where it can use its peel and juice to its advantage; any sour and bitter flavors can be developed and enriched into elements of depth.
Applications
Seville oranges are most commonly used for orange marmalade. Use the zest and juice in flavored sugars or salts, syrups, cocktails, vinaigrette or marinades. Pair with fennel, bitter greens, chicories, olives, other citrus, fresh herbs, aged cheeses, seafood, rice, and Spanish spices. Seville oranges will keep, refrigerated, for up to two weeks.
Geography/History
Sour oranges are native to China. Trade routes brought them to Africa and the Mediterranean in the 10th Century. Cultivation of sour orange varieties led to the Seville orange of Seville, Spain in the 12th Century, where it would accrue its name. The Seville orange was the only orange variety in Europe for the next 500 years. It was also one of the first citrus varieties brought to the New World where it was naturalized in the Caribbean, South, Central and North America. When sweet oranges were introduced to America, sour orange trees would begin to shift their role as edible fruit to rootstock. Cross pollination of the sour and sweet orange trees also proved to create bitter fruits in sweet orange varieties which forced farmers to reduce production of sour orange trees.
