Part of a compote dish that belonged to my hubby's mum - I think it's called Carnival Glass.

Quince and Cranberry Compote (Compotes de coings)
2 Quinces (peeled, cored and diced)
12 ounces cranberries (rinsed, stemmed, picked through and drained)
1 cup orange juice
1 cup super fine sugar
Place the diced quince in a small saucepan with enough water to cover fruit over high heat. Bring to boil, lower heat to medium and simmer until quince is fork tender. Set aside without draining fruit to avoid discoloration.
Place cranberries and orange juice, sugar in saucepan over high heat.
Bring to a boil and cook for about 2 minutes.
Lower heat to medium, add drained quince and simmer for about 10 minutes or until mixture thickens and quince melds with the cranberries.
Remove from the heat and cool completely. Refrigerate until use.
Apple-Quince Compote
2 McIntosh apples, peeled, cored and sliced
2 quinces, peeled, sliced and cored (it is easier to slice around the core)
1 tablespoon fresh lemon juice
3 cinnamon sticks
1-2 tablespoons sugar
1 tablespoon honey
1 cup water
Combine the apples, quinces, lemon juice, cinnamon sticks, sugar, honey and 1 cup water in a medium saucepan. Bring to a boil over medium-high heat.
Cover, reduce the heat to medium-low and cook until the apples and quinces are very soft but still a bit chunky, 15 to 20 minutes. Taste the mixture, add sugar if desired.
Remove the sauce from the heat. Cool to room temperature.
Remove the cinnamon sticks and serve.

This week I am very busy with preparing juices, compotes and jams. All the fruits are from my orchard.

Oamaru's long wooden station, designed by Railways Department architect George Troup and completed in 1900, was typical of the new stations built in major provincial centres around the turn of the 20th century.
Oamaru station was particularly famous for its dining room which could seat 250 diners at long tables. The Christchurch–Dunedin express made a regular 22-minute lunch stop here, and for a set price of 2s 6d, travellers could dine on ‘stewed tripe and oysters’, ‘smoked fish with butter sauce’, ‘roast sirloin of beef with Yorkshire pudding’ and ‘compote of pears with boiled custard’. Times have changed and now it's home to The Station Wok Restaurant.
This is a peanut butter and blackcurrant compote doughnut.
Each Christmas Eve I drop a bottle of FIzz off to my elderly next door neighbour. She then spends Christmas with her brother where they open the bottle over Christmas Day lunch. When she returns on the 27th December she always drops in some gourmet doughnuts. This is the picture of this years gift which she has kindly just dropped in.

Pour 6 personnes: Tarte pâte feuilletée, flan crémeux à la vanille, chantilly pistache, compotée de fraises et fraises fraîches.

Today, my husband picked 5.5 kilos of blackcurrants from our garden, and I helped to stem them. They are like redcurrants, which most people know better, but the taste is not the same.
We also have jostaberries, which are a hybrid of blackcurrants and gooseberries. The name Josta comes from German: Johannisbeeren and Stachelbeeren.
We eat our berries raw or cook them, like compote. We also make jam from them.
Blackcurrants and jostaberries look rather similar, but jostaberries are generally a bit larger and there are fewer on a stem. My next photo shows the difference.

okay okay, not only am I AWAY with the fairies when I have one of my attacks, but I play with fairies as well!!!
Titanaia gets moved around my bedroom on a regular basis, and she whispered in my ear that she was feeling particularly blingalicious today, so she got plonked into a compote full of jewels.
She's happy, Amanda is happy as she looks quite comfy there!!!
