Bacalhau à lagareiro (literally "olive oil press style codfish") is one of the hundreds of ways to cook codfish - the star of Portuguese cuisine - in Portugal. The recipee is very simple: the dried codfish is soaked in fresh water for various hours to remove the excess of salt, and then baked in the oven. It is served with with potatoes, and seasoned with generous amounts of garlic, parsley, and olive oil.

For our last night in the Bahamas, the three of us went to Sole Mare an Italian Restaurant located just inside our hotel and ordered this delectable grilled codfish for myself while Lil had the grilled tuna and Malou had the grilled sole! I guess we all had seafood on our minds that particular night.

 

Sated, we happily ambled our way to Cafe Johnny Canoe and capped the night with a tall glass of Mojito!
