Clam Chowder with bread at A Slice Of Italian in Kingston, New York. #hudsonvalley #newyork #diningout
First off, it's a good soup. Creamy, spicy, crabby... all good stuff. The bell pepper is a standout flavor. It's not *too* crabby, and the texture can't be beat. This recipe is adapted from Rachel Ray and I am wholly satisifed with the result. Very pretty. Very tasty.
But what I really want to talk about is oyster crackers. Today a friend asked me (regarding cooking), "Are you more interested in the process or the product?" I'm here to tell you, process is a big part of it for me. If the process is right, the product will follow. So many things that used to be produced are now simply procured. Candy corn, graham crackers, marshmallows... these are not found in the wild. These are *produced*. So goes the oyster cracker. A lowly garnish in loving hands becomes a thing of beauty.
So along with this soup recipe, I include a recipe for the stately oyster cracker. So easy to make an oyster could do it. I bet that's where the name comes from.
One more thing. The bowl you see in this picture is borrowed. Today a co-worker was sanding the bottoms of bowls and plates in the kitchen at work to keep them from scratching the tabletops. I know, right? With this one freshly sanded and stacked, it was suggested that in might look nice in one of my "soup pictures". I think they're right.

Zucchini and Corn Chowder is a chunky soup loaded with veggies and basic spices. It is perfect to have for dinner with a few slices of bread on the side. Here is how to make it.
I'm off to Maine for a quick couple of days to mourn/celebrate the end of summer. I'm hoping I get a chance to drop in to this cool restaurant for another bowl of fish chowder. This picture doesn't include the huge, delicious blueberry muffin that automatically came with it.

Another soup I ate at Panera and decided to recreate better at home...and I succeeded.
This has fresh and frozen corn, Yukon Gold potatoes, celery, sweet onions, shallots and red peppers. It was made with chicken stock, thickened with a roux and finished with only a little bit of 2% milk...so it's a lot healthier than most chowders seem to be. Other than the fact that I topped it with bacon (and green onions).
I'm getting pretty skilled at my soup making...I haven't used a recipe for the last few that I've made. Sorry, I had to pat myself on the back.

THIS WAS SOOOOOOO GOOD! From a food booth inside Quincy Market, one of the best clam chowders i've had, and extremely filling!
MrsMurphy's Chowder – this is another poem which has been requested. It loses some of its effect on Flickr, we said it all together and more than four times. I would bring it to an end when I feared some of the children might expire from the effort
Other poems can be heard in this set.
My usual easy midsummer recipe. Saute chopped onion, pepper and zucchini until onion is translucent; add chopped ripe beefsteak tomatoes; add corn sliced from the cobs (1 ear per tomato), and baby spinach. Season with your favorite herbs, salt and a pinch of coriander. Add enough water to make it "soupy." Simmer until the veggies are tender. Serve with cheddar cheese and good dunking bread, and a chilled bottle of Riesling or Vinho Verde.
Unfortunately, it closed in 2019.
