Nice. Made this before, but we were in a hurry and I didn't get to take a pic of it. Lucky for me I made one entire recipe of the spice rub so I got about 5000000000 cups of it left.
A little packet of New Mexico Red has jumped fantastically in price, I remember when 50 cents would get this amount, now it's more like 99 cents!
My darling brought some excellent chili powder back from Hatch, NM on last year's vacation. Here is the result of said chili powder and his hard labor! Mmmm...
Quality spices.
Since most of the "chili powder" found in stores around here is hot cayenne powder, I decided it's a good idea to grab a few milder varieties whenever I'm traveling through California. This way, I can actually make chili that has a nice flavor and doesn't set my mouth on fire (without resorting to packaged chili mix).
If you'd like to make some for yourself... Start by putting a DRAINED 19oz. can of Chick Peas in a food processor. Add one 5 oz. can of Tuna (DRAINED) and two slices of Turkey. While this is blending drizzle in some Olive Oil until the whole thing is the consistency of runny Peanut Butter. Next add in 5 oz. of Cream Cheese (let this warm to room temperature so your food processor can blend it in more easily), 5 oz. of Mayonnaise, 5oz. of Sour Cream, and 5 oz. of Yogurt. Next, add in a Tablespoon of Chili Powder, a Tablespoon of Cumin, and a Teaspoon of Cayenne. Note: If you want it hot and spicy add more Cayenne. This recipe has just enough Cayenne to let you know there is some warmth without giving you a burn.

Soft, silky eggplant with cheese overload. :-)
Rub eggplant halves with oil. Sprinkle with salt. Roast with round side under in 200°C oven for 25-30 minutes. Take out of the oven, cut the flesh (a little bit like you do with duckbreast, not sure how to say this in english) Add tomato stuffing on top. Then cheese and grill for another 15 minutes or when cheese is melted enough.
For the tomato stuffing:
Gently fry some garlic with chilipowder in some butter. Add can of tomato. Crush. Simmer for 20 minutes. Add oregano, capers and some panko to thicken it up. Finally mix with some roasted pinenuts and fresh basil. Put this mixture on top of the roasted eggplant. Add cheese, I had provolone from France. And grated very mature Tomme.
Before serving maybe some more fresh basil.
This was just that I wanted. An overload in flavours and an overload in cheese.
Green chili -- made with (our own) pork, chilis that I roasted, tomatillos, cilantro, jalapeños.
Very different than red chili, but we ate it all the time in El Paso.
