I think all they do is dredge these in flour and either pressure cook or deep fat fry 'em. This makes the skin golden and crispy and keeps the meat tender and juicy. The country gravy on the potatoes is a nice rich balance. The corn is FRESH.

I made this and it was awesome. I bought the chicken from the farmers market and stuffed it with thyme and onion, covered it with salt and pepper and garlic and whatnot. I was very happy with it and then I made stock from the bones too.

There is a little story behind this shot. Well I started out to make a low calorie dinner last night, thought since we have be eating so bad over the holidays, that I would make some healthy baked chicken. Well it was a nice thoughtā¦.., but it did not last long, I just keep adding things to the chicken, like Mozzarella, & Parmesan cheese to top the chicken and homemade dressing on the side ā like I said it was a great thought.

Knocked up a chicken dinner in no time at all, cheap ingredients, very very tasty. Roast potatoes, carrots, broccoli and parsnip with butter roasted chicken and pan glaze liquer with a smidge of boullion.
For tonight Iāll just brush some of the herbal honey glaze over the plums before laying them around the chicken halves, waiting until the last 10 minutes or so of cooking. A few chunks of fresh lime or lemon to squeeze over the finished bird and fruit, a pan of quick-cooking orzo pasta tossed with some crumbled feta cheese, and a bowl full of fresh arugula dressed in a vinaigrette is an ideal supper out on the unstained deck!
