Even when you are off the beaten trail in Alaska - you can find some mighty good eating. Talk with the local folks in the villages you visit - they will point you in the right direction.

So glad to see that this is still here. Reminds me of being a kid.

oahu north shore local favorite, bus loads of tourist crowd. the wait time is not as long as l.a. chinatown's "howlin' ray's" but "ray's kiawe" is about 25-30 maybe. lesson learned: get your chicken from anyone named "ray".

I paid the equivalent of $15 for this chicken dinner plus 2 bottles of my favorite drink at the local Hooters franchise. It was a little pricey for a chicken dish. Elsewhere I could get a whole roasted jumbo chicken for $4.

I snapped this photo with my Canon Rebel T5 in Brookville, Kansas, population 254 (2018). Brookville was known as a cowtown and as a railroad shipping point from the 1860's to the 1880's. Perhaps, the Brookville Hotel (a former hotel known for it's chicken dinners) is its biggest stake in Kansas history. The hotel (in the background of this photo) closed in 2000 and built a replica structure near I-70 in Abilene, Kansas. The town can also be seen in the movie "Up the Academy."

Whipped this up the other night. Used long cook rice with chicken broth for the rice bed. Chicken breast, a can of diced green chiles, and some olive oil for the topping. Sliced a tomato for a veggie.

INGREDIENTS:

 

3 to 4 boneless skinless chicken breasts (about 1 lb)

3/4 cup Progresso® Italian style panko crispy bread crumbs

1/2 cup chopped pecans

2 tablespoons chopped fresh Italian (flat-leaf) parsley

1 container (6 oz) Yoplait® Greek Fat Free plain yogurt

3 tablespoons olive oil or butter

 

DIRECTIONS:

 

1. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/2 inch thick.

 

2. In shallow dish, mix bread crumbs, pecans and parsley. In another shallow dish, place yogurt. Dip chicken into yogurt, then coat with crumb mixture.

 

3. In 10-inch skillet, heat oil over medium heat until hot. Cook chicken in oil 8 to 10 minutes, turning once, until chicken is no longer pink in center and coating is golden brown.

 

**You can substitute chopped walnuts or almonds for the pecans.

Once a year my wife's thrid grade class hatch chickens in March.

 

As clock work they all hatch within a 24 hour period. By the time I arrive most of them have hatched and dried in the incubator and then its picture time.

The colors and the aromas, were awesome.
