This was Sunday, the day of the Noreaster, when we decided to go across the Newburgh/Beacon Bridge to Boston Market for supper. It was raining steady, but i had no inkling then that by the next morning it would have dumped 7.5 inches of rain on us.
Chicken again, with mashed potatoes, corn and lots of gravy, and, of course, Barq's. It was delicious. Years ago there was a Boston Market in Anderson which I went to once. Didn't last l;ong and gone unless moved to new location and maybe in Greenville but I haven't seen one.
Pounding chicken pieces-boneless breasts or thighs-into evenly thin cutlets makes cooking much quicker (thighs will take a little longer to cook than breasts). Use a super hot skillet and don’t over crowd the pan, so the chicken gets beautifully browned. Then make the sauce in the same pan-efficiency at its finest! This is the perfect dish to play with flavoring-use different herbs or add grated lemon or orange zest to the butter sauce.

We made these over the weekend and they flopped 10 seconds after this picture was taken.
So we turned them upside down and cooked them again, they were still doughy though.
Conclusion:
Too much batter and oven too hot.

All over the eastern Mediterranean these spiced meat sandwiches are a street food staple. Originating in northwestern Turkey, this style of seasoned meat wrap is so common it’s sometimes called the Middle Eastern taco. The meat is typically shaved off a large rotating cone of roasted layered meat, but here you can create your own with chicken tenders. For a bit of smoky flavor, use a stovetop grill.

While veggies are roasting:
wash chicken and sprinkle parmesan cheese on it or use shredded parmesan cheese and place chicken in hot skillet with olive oil. cook till done. I also sprinkle on Montreal Steak Seasoning on the chicken before putting in skillet.

My pesto chicken pizza can be made in a very hot oven or on the grill. If you want to try your hand at grilling, you’ll need to par-cook the crust on the grill grate for a few minutes before topping it with the seasoned chicken. Use your own garden pesto if you’ve been overrun with fresh basil, or pick up a container at the grocery. My kids would eat cardboard if it had a garlicky pesto slathered on it!

This is one of my favorite easy dinners, chicken breast, pesto, penne and grape tomatoes, delicious and quick! The tomatoes pop and it gets nice and saucy.
Along the same line, my boys aren’t fans of fast food chicken nuggets, but they do relish home-baked strips of chicken that have a savory coating. They’re perfect for a quick weeknight meal; add a bowl of potato salad or coleslaw and take time for a summer evening outside. You can’t beat a simple coleslaw with these savory tenders. My kids love a combo of chopped cabbage, julienned carrot, and thinly sliced red onion, tossed with a creamy slaw dressing. Try adding some chopped fresh cilantro or julienned jicama for a southwestern touch.

In Tuscany, bruschetta is really just deliciously toasted bread that is rubbed with fresh garlic and topped with super-ripe tomatoes—at their harvest peak. The word “bruschetta” means toasted (or literally burned). I’m really just creating open-faced sandwiches that can be eaten with a knife and fork, so you don’t miss any of the delicious chunky topping.
