This Jamaican style Stew Chicken with Potatoes turned out great after being browned in the air fryer and finished on the stovetop.

I really like using this method because no oil was added and the chicken was perfectly browned. The total cooking time was only 20 minutes - 15 minutes in the air fryer and 5 minutes on the stovetop. It was delicious!

Precooked ribs seem to be very popular these days, with many different brands popping up in stores. This one was WalMart's Great Value brand. At only $6.97, it was tender and had decent flavour. Other brands I've tried were just pieces, more like odds and ends. I would probably buy this again.

It's been a long time since I've made pasta sauce, especially from scratch.

I kinda crammed everything into this version, starting with a blend of ground beef and ground pork, Italian sausage, mushrooms, and stewed tomatoes. They all worked very well together! I served it with Fettuccine pasta. Yummy!

I made a small batch of jerk pork using my own recipe and it turned out great! It was rich in flavour without being too hot. Not bad for a toaster oven but it would have been even better if done on a charcoal grill. Yummm!

Although this wasn't made from scratch, I do enjoy Fish & Chips. The air fryer makes it so convenient to prepare, even from frozen.

Both the fish and the fries turned out very crispy and not greasy at all. I didn't add any oil, not a drop!

Escovitch Fish is another Jamaican dish that I enjoy but don't have very often. It's basically a fried fish, smothered in a spicy sauce made with onions, peppers, and vinegar. It's much better than it sounds!

Snapper is the preferred fish for this dish but Kingfish steaks are also very good, especially if you don't like a lot of bones.

Another home cooked dinner. Basa fish filet cooked in butter and served with broccoli and purple sweet potato. The fish turned out great and the broccoli was good but the sweet potato was maybe a bit too flavourful for this delicate fish.

When the craving hits, I just have to satisfy it. This time it was a simple but hearty Jamaican style Pumpkin Beef Soup. Instead of the traditional ground provisions, like yam, chayote, and sweet potato, I used pumpkin, potato, carrots, and corn. It turned out great, with very little fuss!

I sometimes cook this with chicken instead of beef. It's a lot quicker.

I saw a bottle of Korean BBQ sauce on sale at a local market so I decided to try it on some chicken that I had thawed out. I added a little garlic and just the bottled sauce before grilling it. While it wasn't restaurant quality, it wasn't bad Darn, I forgot that I had some kimchi in the fridge!

I'll have to try this again, maybe with some pork or beef, and marinate it longer.

I still have some fish left so here is round two of Fish & Chips. This time, I tried a different batter and made thin potato chips, not fries. This turned out pretty good!

This batter was thicker than the last time, giving the fish a little more texture but it's still not exactly what I was looking for.

I sliced the potato on a mandoline to make them wafer thin and crispy. Thank goodness I didn't slice off my fingers!

Ever since discovering Butchies, I've enjoyed many delicious meals here. Their food is damn tasty, as their slogan says.

I was very excited to try their special Jamaican menu featured over two days. It all sounded so delicious!

Unfortunately, I got there a bit late and most of the featured items had already sold out. They did, however, have Jerk Pork and Sweet Potatoes available. I'll have that!

I really enjoyed the sweet potatoes but the jerk pork, although very tasty, lacked an authentic jerk flavour. It was more like their regular pork with a very mild jerk flavour. Even the smoky flavour was more like BBQ pork.

Although I was a bit disappointed, I did end up with a very tasty meal and a generous serving.

I love Chicken Wings! I keep experimenting with different flavours. I'm still not sure if I prefer dry or sauced wings. I kinda like them both.

This time, I did Lemon Pepper wings with homemade coleslaw. At the last minute, I decided to toss them in cornmeal before cooking them in the air fryer. They turned out really good, with a nice texture!

I love Honey Garlic Ribs and these, done in the air fryer,m turned out great! I also love asparagus and these were also done in the air fryer.

The ribs took 15 minutes, turning them once at 10 minutes and the asparagus took only 6 minutes, turning them at 4 minutes. Both were perfectly done!

Simple is good! Pak Jam Gai, or boiled chicken, is one of those comforting dishes that I grew up with and still enjoy once in a while.

Served with chopped green onions in soy sauce with hot oil poured over it, this dish is simple and delicious. I actually added some chili oil to the sauce, giving it a little kick.

The liquid used to cook this was made into soup with the addition of a few extra ingredients. Again, simple and delicious!

This Jamaican style Chicken Soup is one of several dishes I classify as comfort food. It's savoury, warm, and delicious, especially with the cooler weather moving in.

This simple small batch was made with chicken thighs, potatoes, carrots, and corn. Traditionally, I would have made a bigger batch and included salted pig tail, yam, and other ground provisions. Either way, it was delicious!
