A sure sign of spring was the rural mail carrier, having boxes of small chicks, in his car or a display of chicks at the feed store.

Poultry housing should provide clean, dry, comfortable quarters for birds throughout the year. To brood chicks, you need adequate heat and space. The house and equipment should be clean and in good repair. Set up and warm the brooding area before the chicks arrive. Chicks will need a warm, draft-free location with proper ventilation and access to clean water, appropriate feed and protection.
Space and equipment
The normal brooding period, when heat is required, is from the time chicks hatch until they are about six weeks old. Chicks may be brooded many places on the farm. The main requirements are adequate space, a reliable source of heat and proper ventilation. A brooder house measuring 10 by 12 feet will take care of 120 chicks to eight weeks of age.

Chris built this brooder box to replace the galavanized tub that we used for the first week. This brooder gives them about a squre foot of space for each bird - its much bigger than the tub!
Recept uit het boek Brot backen in Perfektion van Lutz Geissler. In alle recepten in dit boek wordt maar heel weinig gist gebruikt. In het deeg voor deze broden zit maar 0,2 gram droge gist op 585 gram bloem/meel. Lutz gebruikt in het boek 0,5 gram verse gist. Het deeg wordt niet gekneed, alleen kort gemengd en na 8 en 16 uur stretch & fold. Na 24 uur vormen, ± 1 uur rijzen en dan afbakken.
I had to knock down a yellow jacket nest that was just above our back sliding door. Felt rather guilty as it condemned the above to death, but it did give me the opportunity to photograph it with my Tamron macro lens. You can see cells with eggs and larvae.
