We woke up to the first day of snow this year, so it seemed appropriate to take some of the raspberries we harvested in the summer/fall out of the freezer for breakfast. This bread pudding was based off of and modified from a Nigella Lawson recipe.
An egg-free batter made with chickpea flour and almond milk makes the perfect soaker for bread pudding (and French toast). I used my mom's (freezer-burned) Holiday Brioche, so of course it's not vegan, but using your favourite vegan fruit loaf it's 100% there!
Breadpudding, my way i.e. no bits of strange things, just bread (OLD), milk, eggs, sweetness and cinammon. And a little bit dense, the Trini way.

A dessert out of this world, from my youth. We were a large family and the left-over bread was mixed with eggs, maple syrup and milk to make this succulent pudding!
Un dessert de ma jeunesse, à faire rêver. Nous étions une grande famille et c'est de cette façon qu'on utilisait le pain rassis. On le trempait dans un mélange d'oeufs battus, de sirop d'érable et de lait. et on le cuisait au four. Un succulent pouding!
