INGREDIENTS
2 cans (13.9 oz each) Pillsbury® refrigerated orange flavor sweet rolls with icing (16 rolls)
2 cups half-and-half
2 EGGLAND'S BEST whole eggs
2 EGGLAND'S BEST egg yolks
1/2 cup sugar
3/4 cup Fisher® Chef’s Naturals® Walnut Halves and Pieces, coarsely chopped
1/4 cup half-and-half
1/4 cup LAND O LAKES® Butter
1 teaspoon vanilla
DIRECTIONS
1. Heat oven to 400°F. Spray large cookie sheet with Crisco® Original No-Stick Cooking Spray. On cookie sheet, place rolls 1 inch apart. Reserve icing. Bake 8 to 10 minutes or until golden brown. Remove from cookie sheet to cooling rack. Cool completely, about 10 minutes.
2. Reduce oven temperature to 350°F. Spray 8-inch square pan with cooking spray. Using serrated knife, cut rolls into 1/2- to 1-inch pieces; set aside.
3. In large bowl, mix 2 cups half-and-half, whole eggs, egg yolks, sugar and walnuts until well blended. Gently stir in roll pieces. Spread in pan.
4. Bake at 350°F 50 to 55 minutes or until toothpick inserted in center comes clean and top is deep golden brown. Cool 30 minutes.
5. Meanwhile, in 1-quart saucepan, heat icing (from both containers), 1/4 cup half-and-half and butter over low heat, stirring occasionally, until butter is melted. Stir in vanilla.
6. Cut warm bread pudding into 9 servings. Drizzle with sauce.

At Town Line Diner in Rocky Hill, CT.
A Mediterranean dessert with shredded phyllo dough, bready custard, nuts, honey syrup, and in this case, a phyllo basket. The diner staff said this was actually an Albanian dessert called "kallaktopuri", or for those who can't handle that, simply "bird's nest", but I can't find kallaktopuri mentioned anywhere. Kataifi is the closest thing I could find, so that's what I'm calling it. It's like a cross between baklava and bread pudding, and is extremely sweet. I could only eat some of it because it was so sweet.
This was described as a souffle but it really was a bread pudding (with cherries). White icing and strawberry preserves were on top. Very rich and decadent; I couldn't eat it all.

Bread Pudding, Close-up - For a special treat on Super Bowl Sunday, I made a bread pudding for the first time, following a Taste of Home recipe and adding a few ingredients. It was a great success and used up all the bread crusts saved from a sandwich project. Highly recommended.
I added cooked raisins into the mix and then sprinkled chopped pecans on top before baking it. The syrup is just sugar, butter, vanilla, salt and nutmeg. If you saw my recent photo of crustless sandwiches for the grandkids, you'll see how I used up all the bread crusts from the bag in this photo: www.flickr.com/photos/cobalt/8440561491/
Other ingredients used: fat-free evaporated milk, white eggs, vanilla, sugar, brown sugar.. top with fat-free cool whip before serving.
Yummy & does not put too much guilt in me (as in pounds).. my kind of dessert indeed :D

Tear a large loaf of bread (french or wonder) into small pieces. Heat 3 cups milk, half a stick butter, and half a cup sugar in a pan. Pour milk mixture over bread and mix until milk is thoroughly absorbed. Add cranberries (or other fruit/berries) and three beaten eggs, bake at 350 for about an hour.
I like my bread pudding to have a nice chew as opposed to the light fluffy texture that some have. In addition to that chew this had great flavors. Banana, chocolate, fresh fig. Could have done without the almonds.
Over all this was a wonderful rendition of something that should be an easy crowd pleasure but is a giant let down at so many restaurants.
The Old School Coffee Shop - probably the smallest commercial kitchen in Florida - serves up some of the finest bread pudding in the state. It's located on the eastern edge of Jungle Adventures, near "Swampy" (http://www.flickr.com/photos/volk/2458510305/).
