Okay so granted I did add some Caesar salad dressing to this afterwards but it currently contains romaine lettuce, tomatoes, croutons, breaded turkey, cheese and bacon

Tonkatsu (豚カツ, とんかつ or トンカツ?, pork cutlet), is a Japanese dish which consists of a breaded, deep-fried pork cutlet. There are two main types, fillet and loin. i had some breaded shrimp i wanted to use up, but wasn't sure what to have with it.
rice is the obvious adjunct, to my thinking, but that sounded so bland, so i did an internet search for "shrimp, rice and ...." and up popped a recipe for shrimp, rice and peas.
so peas it was.
not the most exciting dish i ever had, but topped with some sriracha sauce, cocktail sauce and some soy sauce, it wasn't too disappointing.
i fear that if i keep posting the occasional luncheon option, i'll be accused of being a fan of food porn and that's certainly not the image i'm aiming for.
Breaded mozzarella cheese balls. Baked in the oven. Dipped in marinara sauce. Consumed with great delight. Tasty and warm.

For dinner tonight, I cooked grilled salmon with hollandaise sauce, scalloped potatoes and breaded okra. I'd never tasted, or made, hollandaise sauce before, but it complimented the fish perfectly.

I was cooking all day - for lunch I had a mushroom and cheese omelette, with fresh organic mushrooms, and in the afternoon I made some banana-nut bread. Yum yum! I'm sure glad I can cook!

Not sure they'll turn, but if not at least they can be breaded and fried. We may live in New England, but we've got Texas roots. :)
Open bag of frozen artichoke hearts and add the juice of half a lemon (if it's juicy, a whole one if it's not).
In a bowl, beat one egg with a tbs of water
In a large zip bag mix
1/2 c of flour
1/2 c of breadcrubs (I used panko)
1/4 c of shredded (not grated) parmesan or romano cheese
1 tbs of dried oregano
S&P to taste
Coat hearts in egg mixture then drop in bag of breading and shake to coat.
Pour out in a single layer on baking pan, drizzle with plenty of olive oil and bake at 450 for about 20 mins or until golden brown, turning halfway through.
I serve with a dipping sauce of 1/4 c of unflavored greek style yogurt and about
2 tsp of sriracha or similar hot sauce.
