For our evening dinner on Saturday 16th-July-2022 , I cooked some Breaded Cod Steaks , and served them with a Home made Salad .
Chopped up Lettuce , Tomato , Celery , Cucumber and Spring Onions . I also had a few vegetable crisps ( beetroot , carrot and parsnip ) left from my earlier Lunch . So I placed some on our plates too !

Minced meat skewers, breaded fried carrots, steamed bok choi and some sweet chili sauce for dipping the carrots and the skewers.
The second tier of the bento box has plain white rice sprinkled with furikake, finely chopped chicken with ginger and umeboshi, and a cocktail tomato for more colour.
The chicken dish was made with leftover breast meat from half a rotisserie chicken.
A few of the Mergansers and a few of the Buffleheads seemed to enjoy each other's company on the Niagara River
Sampler platter - 2 breaded catfish filets, stuffed crab, stuffed shrimp, fried oysters, clams, shrimp and a side of dirty rice.
On Monday evening my lady friend cooked for our Dinner . A breaded Chicken steak , served with “curly fries” , and Tender Stem Broccoli . The two vegetables were My choice of accompaniment .

~Partially-breaded and pan-fried veggie-chicken filets ...most of the breading came off in the pan :(
~Salad with vegan ranch dressing
Best Vegan Ranch Dressing
~1 cup vegan mayo (I use Vegenaise)
~1/2 tsp garlic powder
~1/2 tsp onion powder
~1/4 tsp black pepper
~2 tsp parsley
~1/2 cup unsweetened soymilk
Whisk all ingredients together and chill before serving. Add a little more soymilk if you need to thin the dressing.

Why be vegan?:
I've never had gazpacho I didn't make, so I've just made it the way I like it. And the few who've tried it have liked it, too.
But, this veers way off of any recipe I've ever seen, so purists may argue it's not even "real" gazpacho?
Either way, it's great for a hot summer day.
The following yields about 6 cups, so I usually double it so there's leftovers.
First I chop the following - big chunks are fine - and blend it in a blender until liquid...
... 3 green bell peppers
... 3 red bell peppers
... 1/8 large red onion
... 3lbs tomatoes
... 1-2 cloves garlic
Then, I chop the following into bite-sized chunks...
... 1/8 large red onion
... 1 red pepper
... 1 green pepper
... 2 stalks celery
... Half a cucumber
I then stir it all together in a large bowl and season with xvo, red wine vinegar, salt, pepper, basil, maybe oregano. (I like to sprinkle crushed red peppers on mine.)
And, of course, I chill it thoroughly (4ish hours) before serving with the stuff you see in the pic.
This panko breaded chicken turned out deliciously crispy in the air fryer, without using any oil! That means it's also healthier, right?

Album Description – Mainz, Germany – 24DEC2017:
Our full plane – including Joe, who got on! – landed Christmas Eve in Frankfurt am Main, and Joe rode the crew bus with me to Mainz.
Joe and I went to St. John's Lutheran Church Christmas Eve service in St. Augustine's Church. St. John's is currently under excavation, turning up some of the oldest Christian finds north of the Alps.
St. John's choir sang some of the most touchingly beautiful Christmas music. All too soon the church service was over.
Joe said, "I'm hungry."
We went out to dinner with 7 other fellow crewmembers, laughed, enjoyed great food and conversation. What a fun night we all had!
Christmas Eve in Germany! And an awesome 24 hours in Mainz!
On Christmas Day at 1:58 p.m. we touched down back home. This travel set a new record for Joe: 2 round trips to Germany in 1 month!
Joe slept all but 5 hours of our 27-hour-18-minute layover.
He also ate, rested, slept 8 hours going and 10 hours returning, slept 15 hours straight once we got home! I have a great job and I love it, yet if you think serving up to 300 passengers at a time sounds like a vacation, come with me; relax while I walk 2 days, 8-10 miles a day, 5 miles up in the sky meeting wants & needs of hundreds of people!
It was a sunny 70⁰F when we left home, overcast 45⁰F when we got up from our arrival nap, overcast 41⁰F the next morning when we left the crew hotel, overcast 41⁰F when we landed early that afternoon after flying 10 hours: our transatlantic flight arrived early, 9+58; the flying time was blocked for 10+10.
Merry Christmas, everyone! I am looking forward to celebrating the birth of Christ the Lord during these 12 days of Christmas! Including while working my next flights this weekend!
Even coming with me then sounds like work to Joe, who just retired!
"Joe, I'm scheduled to go again this weekend – want to spend our New Year's Eve together in Germany?" "No, thanks." "Two weekends in a row flying twice over over the ocean and back too much?" "Yes."
