I haven't been cooking much so I'm trying to get back to it with something easy, I could eat breadcrumbs on pretty much everything.
Best effect in large:

Pasta bake with barbequed chicken, roasted pumkin and penne topped with ricotta, colby cheese and breadcrumbs.
Protein-rich and comforting, this meatless casserole is anything but boring. Rancho Gordo Zarco beans and brown rice are mixed with creamy (but not fattening!) cottage cheese and yogurt. Lemon, shallots, garlic, chives, rosemary, and parsley brought a fresh dimension to this casserole. Of course, the topping of breadcrumbs and parmesan is quite addictive too.

10 Ounces Ground Turkey
⅓ Cup Panko Breadcrumbs
1 Yellow Onion
3 Cloves Garlic
1 Stalk Celery
2 Teaspoons Herbs de Provence
1 Lemon
1 Russet Potato
6 Ounces Baby Spinach
⅓ Cup Ketchup
About 650 Calories Per Serving
Makes 2 Servings
Directions
1-Preheat the oven to 425°F. Heat a medium pot of salted water to boiling on high heat. Peel and cut the potato into large pieces. Peel and mince the garlic. Peel and small dice the onion. Small dice the celery. Cut the lemon into quarters and remove the seeds
2-Once the water is boiling, add the potatoes and cook for 9 to 11 minutes, or until soft on the outside, but still firm on the inside. Drain thoroughly and return to the pot. Toss the potatoes with a little olive oil and season with salt and pepper to taste.
3-In a large bowl, combine the ground turkey, breadcrumbs, celery, Herbs de Provence, 1 tablespoon of olive oil and half of each of the onion, garlic and ketchup; season with salt and pepper.
4-Roast the meatloaf & potatoes:
On a lightly greased sheet pan, form the mixture into a loaf. Place the cooked potatoes around the loaf and roast for 28 to 32 minutes, or until cooked through and a meat thermometer reads an internal temperature of 165°F.
5-Baste the meatloaf:
Just before the meatloaf is cooked through, cover the loaf with the remaining ketchup and stir the potatoes. Roast for an additional 2 to 4 minutes, or until the ketchup is set. Remove from the oven and let stand for at least 5 minutes before slicing, then
6-Cook the spinach:
While the meatloaf rests, in a medium pan, heat a couple teaspoons of olive oil on medium until hot. Add the remaining garlic and onion and cook 2 to 3 minutes, or until fragrant. Add the spinach and cook an additional 2 to 3 minutes, or until the spinach starts to wilt. Remove from the heat and stir in the juice of 2 lemon wedges. To plate your dish, divide the meatloaf, potatoes and spinach between 2 plates. Garnish with the remaining lemon wedges, if desired. Enjoy!

Add to oiled baking dish. Top with Panko breadcrumbs and melted soy margarine.
In 425 °F oven, bake, uncovered for 30 minutes to crisp the top. Decrease heat to 350 °F, cover, and bake for 60 minutes.
Serve, hot, topped with sour cream or apple sauce.

Ingredients
3/4 cup Whole Wheat Panko breadcrumbs or lightly crushed Wasa Light Rye Crispbread
1/3 cup FF milk
1 lb. extra-lean ground chicken
3 large egg whites
1/4 cup chopped fresh parsley leaves
1 T plus 1 tsp. grated RF Parmesan cheese
2 tsp. garlic powder
2 tsp. onion powder
1/2 tsp. salt
Instructions
Preheat the oven to 400F. Lightly mist a medium baking sheet with olive oil spray. Set aside.
In a mixing bowl, combine the bread crumbs or crushed crispbread and the milk. Let stand for 2 to 3 minutes, or until the milk softens the crumbs. Add the chicken, egg whites, parsley, cheese, garlic powder, onion powder & salt. With clean hands or a fork, mix well. Divide the mixture into 16 equal pieces. Roll each piece between your palms to shape into a ball. Place the meatballs, not touching, on the prepared baking sheet.
Bake for 12-15 minutes, or until no longer pink inside.

This reminds me of Hansel and Gretel. It also makes me want to have a picnic with nectarines, thick fresh rustic bread, brie, and red wine. With ants and bees and the sound of cicadas and an occasional sparrow stopping by for a treat. And the smell of decaying leaves in the distance, and the sweet premonition of laughter and gingerbread and hunger never to be appeased.
