The Twin Cities & Western is still at work at the sugar beet plant near Renville as blizzard conditions slow most everything else in the area to a halt. Groundhog Day doesn't mean much to Minnesotans. I don't think a groundhog would even bother poking his head out of his den.

We grow beets every year, always too many for us so we share with friends. For some reason they were huge this year these four will make enough pickle to last all winter :)
Folks are out harvesting their sugar beets for the season in North Dakota, near the Minnesota border.

This was taken a week or two ago. But I wanted to share it here in this group. I mean look at all that lovely grain in the beet, the vibrant color, the nourishment of it. It was my very first raw beet ever. I enjoyed it the best raw dipped in an Italian dressing. This week will be so fun. I get a new box delivery of organic fruits and veggies tomorrow and I have a new recipe to share. A winter warm drink! xo
SBB Cargo Re 4/4'' 11231 had just arrived to collect a rake of nine Eaos open box wagons loaded with sugar beet at the Ependes loading point. Seasonal freight 68513 would transfer the wagons to Yverdon-les-Baines where they will be consolidated with other wagons to form a block train delivery to Aarberg later that afternoon.

Tonight my wife was prepping veggies for a side dish with tomorrows dinner. While cutting the beets, she placed the chunks in water. The reflection and color of beets in the water was very enchanting. I played around with the image in Lightroom and Photoshop, until this creation was born.
SBB Cargo Am 843 053 had collected the five Eaos bogie box wagons loaded with sugar beet from Roche VD en route from Villeneuve to Bex as part of the local set of freight trip activities. This consignment of sugar beet would be consolidated with wagons loaded near St Triphon Sidings for onward movement for processing.

These canned beauties are the precursor to some killer Harvard Beets - simply drain and thicken the brine with cornstarch, heat and serve. They're not super sweet, but of course that depends on the type of beets you're using.
