Killarney in Queensland, Australia is famous for its beef, although the abattoir closed many years ago. Despite this fact, this local was definitely keeping its distance.
This is a view down the working chute of our new stock pens. I like it because my animal behavior proffesssor back in college used to tell us to evaluate animal handling facilities by going through them as the animals would. For cattle he called it "Beef Like Me."

"Beef, it's what's for dinner" was a slogan used by the National Livestock and Meat Board starting in 1992 to promote the consumption of beef. Apparently, this ad campaign has continued to the present with various spokespeople and advertisements. According to Wikipedia the slogan is recognized by 88% of Americans I won't speculate as to where the other 12% have been hiding, although to be honest I haven't seen any of their ads in recent years. For 121 Pictures in 2021 #89 "Slogans", this is a triptip roast I smoked to medium rare.
The technique used is to get the smoker to 200 - 250F and smoke until internal temp is around 115 - 120F. This cut does not need to stay in the smoker for many hours like a brisket. I also apply a rub of salt and garlic powder for around 6 hours before starting the cooking. Cooking time is approximately 1 hour, depending on weight and temp.

For 122 pictures in 2022 #48 "Ingredients for...", these are the ingredients for making beef jerky. The beef is an eye of round roast sliced 1/8 inch thick. Behind that are garlic powder, liquid smoke, worcestershire sauce, cumin (which I decided not to use), sea salt (I used kosher), brown sugar, ground thai red chile (home grown that I ground up), onion powder, and curing salt #1 (which I believe is just sodium nitrite). Mix all that up and marinate for 18 - 24 hours, then dehydrate.

Another one of the larger beeflies. There are so many this year of different Bombyliidae genera, tiny minuscule ones to large.
In this location, this seemed to be plentiful and we watched them gather sand and move/fly/hover around near the ground. Despite their size, other smaller insects chase them away.
Wikipedia tells us
"The larval stages are predators or parasitoids of other insect eggs and larvae. The adult females usually deposit eggs in the vicinity of possible hosts, quite often in the burrows of beetles or wasps/solitary bees. Where most often in the insect world parasitoids are highly specific in the host species that they will infect, some bombyliids are opportunistic and will use a variety of hosts.
While bombyliids have a great variety of species, rarely are individuals of any one species abundant, and this is perhaps one of the poorest known families of insects relative to its size. There are at least 4,500 described species, and probably thousands as of yet undescribed."
