Most morning, Beans who likes to be out at night, returns from his prowling and serenades me from the top of the parasol which is under my bedroom window until I get up and feed him.
Cook some black-eyed peas and lima ('Butter) beans in boiling water for ± 15 minutes, or until almost tender. Set aside.
Make your favourite tomato sauce: I used onion, garlic, and shallot, sauteed in chilli-infused olive oil, along with the red cabbage, anointed with a good splash of V8 (Original) juice.
When the sauce (to which you've added salt, pepper, Maggi, and spices of your choice — I used 'Carribean' spice from Spice Roads — is beginning to soften,
you can either add a small can of diced tomatoes or a couple of fresh ones, diced.
Let the sauce settle down, and when the beans are almost al dente, add them in, and let them cook for ±20 minutes. Add in your previously fried fake bacon chips, and let the flavours blend.
Spiralize a medium sized zucchini (for two), and sauter in olive oil, adding salt, pepper, and a dash of Maggi, until al dente like spaghetti.
Serve the zucchini as a bed on a warm plate, topping with the veggie tomato mixture.
Add some grated parmesan or other cheese, if you like, and mushrooms would be good! :-)

This seemed like an appropriate picture for this week, since my body is now adjusting to eating a lot of beans again. My wife and I were on an RV trip to Louisiana the past couple of months, so I was not making my normal bean laden soups. I have thousands of vacation pictures to post over the next few months, so check out my photostream. I have a small sampling posted already. HMM
Taken for 117 pictures in 2017, #92, "Full of Beans". Although this has a colloquial meanings, I chose to take this topic literally, and captured a coffee cup full of Anasazi Beans. These are heirloom beans, the ancestor to pinto beans, but have a much better flavor.They have been cultivated in the U.S. southwest for probably thousands of years, and have recently become more widely available. Very healthy, they cook much quicker than pinto beans, and can be used anywhere pintos would be. My favorite use is in charro beans.
I shot this macro by climbing up onto a field wagon filled with soy beans. This is part of the harvest series for the fall of 2009, a year farmers won't soon forget.

Sedum pachyphyllum (Silver Jelly Beans / Dedos)
"Silver Jelly Beans" is a succulent plant originally from Mexico (Sierra Mixta, San Luis and Oaxaca).
The green leaves are short stumpy finger-like projections and are often tipped with red when they receive full sun.
