My first attempt at baking baguettes. The crumb is a little heavy and not chewy enough, but I will work out how to make this work.

i recently read french women do not get fat, at mireille guiliano has a baked apple recipe that inspired me to do this, hers has walnuts.

Sweet Pastry -

85g butter at room temperature

zest 1 lemon

50g icing sugar

1 egg yolk

200g plain flour

Filling -

zest 2 lemons

100g butter at room temperature

100g caster sugar

2 large eggs

85g ground almonds

25g plain flour

6 tbsp homemade lemon marmalade (or lemon curd)

25g flaked almonds

icing sugar, for dusting

 

1. Heat oven to 200C/180C fan/gas 6. To make the pastry, place the butter and lemon zest in a food processor and blitz until soft. Sieve in the icing sugar and blitz again until light and creamy. Mix in the egg yolk with 1 tbsp water, then add in the flour until it's just combined.

2. On a lightly floured surface, bring the pastry together into a ball, then wrap in cling film and flatten lightly to form a disc. Chill in the fridge for 30 mins.

3. Roll out the pastry and use to line six 10 x 2 cm loose-bottomed tart tins, trimming off any excess. Put in the fridge while making the filling. If pastry cracks or breaks, patch up with trimmings.

4. To make the filling, beat together the lemon zest, butter and caster sugar until light and creamy. Add the eggs, one at a time, including a spoonful of the ground almonds with each addition. When all the egg has been added, mix in the remaining ground almonds and flour.

5. Spread the marmalade or curd over the bases of the tart cases. Spoon over the filling and smooth with a palette knife or spatula. The tarts will be full to the top, which is fine. Scatter over the flaked almonds, sit tarts on a baking tray and bake for 15-20 minutes until lightly golden.

Got the idea for an animated GIF partly from my brother, Nigel :)

The glasses fell somehow in the oven with the chicken....didn't smell very good.

1 banana + 1 glass of oats + 0,5 glass of rasins :) mash banana, mix it with the rest, bake for 15 min in 180'C. :)

This year I helped my grandma again with baking cookies for Christmas - the meat machine comes in quite handy for these coconut sticks! ;)

Thanks julochka for the book recommendation that has transformed my bread baking (The river cottage bread handbook). Pictured here is a basic wholemeal topped with oatmeal in the foreground and poppyseed in the background (the poppyseed is my favorite so far)

What You Need

2 Tbsp. margarine, divided

3 Granny Smith apples (1 lb.), thinly sliced

1/2 cup KRAFT 2% Milk Shredded Cheddar Cheese

1 oz. PHILADELPHIA Neufchatel Cheese, softened

1/2 cup fat-free milk

1/2 cup flour

3/4 cup cholesterol-free egg product

1/4 cup SPLENDA® No Calorie Sweetener, Granulated, divided

1/8 tsp. salt

1/2 tsp. ground cinnamon

 

Make It

HEAT oven to 475°F.

 

MELT 1 Tbsp. margarine in large ovenproof skillet on medium heat. Add apples; cook 5 min. or until crisp-tender, stirring frequently. Top with Cheddar.

 

WHISK Neufchatel and milk in medium bowl until blended. Stir in flour, egg product, 1 Tbsp. SPLENDA® Granulated Sweetener and salt; pour over apples. Sprinkle with combined remaining SPLENDA® Granulated Sweetener and cinnamon; dot with remaining margarine.

 

BAKE 12 to 15 min. or until puffed and golden brown.
