Ingredients:
2 1/4 cup spelt flour (though I subbed about 1/8 cup of ground flax seed in)
1/4 c Tupelo honey
1 Tbspn baking powder
1/2 tsp salt
1 1/4 cup mil
3 eggs, beaten
1 Tbspn oil
Preheat oven to 425 degrees F. Grease & flour 16 muffin cups.
Combine all dry ingredients.
Beat together honey, milk, eggs & oil.
Mix w/ dry ingredients. Fill muffin cups 2/3 full and bake for 17 min.
Enjoy.
P.S. These are good w/ lentils ..they have the density of cornbread but are a little more moist. Use Tupelo honey if possible! It tastes amazing!

My favorite, I never tried eating Mussels before because of the way it looks. But my goodness!!! Mussels taste so good pala! I'm now kicking myself for not being brave enough to try it before. Thanks to Cathy for insisting that I should try it. I would have lived my life missing the best tasting seafood ever. Guys, please suggest other places I can eat Mussels.
Restaurant Geysir
This is a restaurant kitchen with a difference – all the food is cooked in the ground with the help of the hot springs. Here, the chef gave us a taste of freshly baked “hot spring bread” (very dark and malty, almost sweet, but much tastier than I thought it would be) served with Icelandic butter along with geothermally-boiled eggs (they are placed in a string bag in the bubbling pools) and pickled herring (absolutely delicious!). Of course, it is best enjoyed with a small glass (or five – when Rocky-Rock heard I was Norwegian he offered me the bottle rather than a glass!) of ice-cold Geysir schnapps.
Baked brie with apricot-raspberry preserves and puff pastry shell.
Recipe:
Cover a wheel of brie with preserves, wrap in puff pastry dough, bake at 425 for 20 minutes. It's literally that easy.
My dessert choice:
Baked Alaska
Swiss Meringue, Coconut Ice Cream, Persian Lime, Pound Cake and Compressed Golden Pineapple.
This also had a very intense pineapple jelly.
Tasty baked chips were one of the many food offerings at the Spokane Restaurant Week kick-off event.
Natural light, but late in the evening so not the best conditions for a snap.

The fruit has been baked. In combination with their fiery red colour a suitable candidate I thought for foodography 6: HOT.
