a vanilla and chocolate buttercream cupcake to perhaps make up for the red velvet? a thousand times over, yes! the vanilla had this subtle vanilla flavor to it - dense and delicious on the tongue. the buttercream had this amazing chocolate flavor like none i've ever experienced before. it was rich but not dark chocolate rich, nor was it too sugary but still sweet. intense is really all i can say.
baked & wired seriously has a different (if not two different) cupcake offerings every day of the week. this will be my downfall.
no camera that day, so this is a camera phone capture under the atrocious flourescent lighting in the breakroom at work.
Since I like to eat so much, might as well show you what I had for dinner tonight. This is one of my favourite vegie, baked bell pepper. They become so sweet after baked and taste really good! If you haven't tried this before, just bake the cut bell pepper for 25mins with 180C.
Day 83
I made a batch of cinnamon muffins and then a batch of scones last night after supper.
We have five muffins and two scones left, just over 24 hours later. And around here, that's actually pretty good.

My daughter's initials are QH so I cut these into those letters. At some point I got tired of that and did little circles instead.
Since my wife had to work I stopped at Smithfield's drive thru. I had the chicken and pulled pork combo with slaw, baked beans and hush puppies.
The bread is baking in the small round cast iron pot you can see between the two rails, sitting on a little stand just over a pile of coals. There are also coals piled on the lid, because they needed to make sure the heat was even.
They would build a wood fire on one side of the hearth, then scrape a few coals over to make a pile on the other side, then set the stand and the pot above the coals. If they were cooking something bigger, they had a crane built into the side of the fireplace with a hanging platform on it. They could swing that over another pile of coals, or over the fire itself, to cook something more elaborate.
Super easy enchilada bake. layer of corn tortillas, layer of black beans and refried black beans, another corn tortilla layer, more black beans, some dry tvp, a small can of spicy diced tomatoes and a small can of enchilada sauce, a last layer of tortillas, and another small can of hot enchilada red sauce. Bake at 350 degrees F for...30 minutes or until it's a little crispy on top and heated thoroughly.
