Ingredients

3 1/3 cup Bisquick Reduced-Fat Baking Mix

1 cup fat-free skim milk

14 oz pizza sauce

6 oz Lightlife Smart Slice Pepperoni-Style Slices

1 cup shredded fat-free mozzarella cheese

1/8 cup red onion(s)

3 Tbsp canned jalapeno peppers

1 bell pepper(s), chopped

Instructions

 

Preheat oven to 375.

Grease 13"x9" pan.

Drop 1/2 dough into pan.

Drizzle with 1 can sauce.

Scatter 1/2 pepperoni and cheese.

Repeat.

Bake 20-25 minutes.

I've been baking for many, many years, but I've never really used a KitchenAid stand mixer. Hand mixers were always good enough for me, plus there's something satisfying to me about mixing the dry ingredients in with a good old fashioned wooden spoon.

 

Recently my Dad gave this mixer to me because it's been sitting in his basement collecting dust (it was my Mom's, and he never uses it). The first few times I used it the results just didn't seem right, so I wasn't sure if I was going to get much use out of it.

 

Tonight I decided to make a batch of Oatmeal Scotchies. It's a pain to stir in the 3 cups of oatmeal by hand, so I thought I would give the KichenAid another chance. I have to say it worked out great. The mixer did all the hard work and the cookies turned out great. Maybe I'll have some use for this after all.

Freshly baked croissant for breakfast…

Life is good!

This series is of some little shortbread buttons I made for my baby shower (in March 08 - I'm a bit behind in uploading ;-p). Topped with pink and blue tinted white chocolate (as we chose to keep the sex of our baby a surprise). We now have our darling little girl, Lucia, who whilst in-utero was named Button!

 

I got a bit out of control with the processing of these photos - I wanted to try every possible variation! I've narrowed it down to 2-3 variations of each to upload here. I think the simplest ones ended up looking the best.

A paleo breakfast treat.

 

In a cupcake pan, add some sort of grease of your choosing. Then line with raw bacon. Inside the bacon cup, add chopped vegetables. I used spinach, onions, peppers, and garlic for this one. Add some spices. Today I used basil, oregano, and Kosher salt. Add a single egg.

 

Bake in a 350°F oven for 30 to 35 minutes.

I made my own version of a chicken parmigiana potato- similar to the one at Potato Shack (potatoshack.biz).

For supper my wife purchased a rotisserie chicken from a local Food Lion. We also had baked beans and salads.

I bake my boule breads in a cast iron pan covered with a clay pot. Half way into the baking process, I remove the clay pot to get a dark crust.
